  1. Yes, you can use Greek yogurt or sour cream. Just dilute it with milk so it is a similar consistency to buttermilk. It is usually about a 75/25 or 50/50 ratio depending on how thick the yogurt or sour cream is. I hope you enjoy! I am looking forward to trying the pizza crust recipe. I am curious to see the difference in texture using the cornmeal.

  8. Craftsteak and Wolfgang Puck's restaurants at the MGM Grand were wonderful. At Craftsteak they had the spring tasting menu (we were there in spring 2010)the chef made virtually the whole menu gluten free so my daughter and the rest of us were able to enjoy a family style meal. It was expensive, but well worth it and absolutely delicious.

  10. We like are dates filled with cream cheese and peppadews filled with fresh mozarella. The peppadews are small slightly spicy peppers that can be found at the mediterranean bar at Wegmans.   11. I noticed the food you ate included ham and bacon. My daughter has the same reaction when she eats nitrates as she does if she is accidentally glutened. Nitrates are in bacon, hot dogs, corned beef, some cold cuts, and I am not sure as we do not eat it, but maybe in ham.   12. I find rice flour can be gritty. I found that my local oriental grocer carries rice powder. I use the rice powder in place of rice flour in some of my flour blends. It is not gritty at all.
  13. I like the Schar bread crumbs the best. They are pricey, but the little bag does go a long way. I also use Rice Chex ground up on their own or if I need to stretch the Schar crumbs, I combine the Rice Chex crumbs and Schar crumbs. If I have any bread failures, I grind those up into bread crumbs and put them in the freezer until I am ready to use them....
  14. I also thought cornstarch would work since it is available anywhere. I might follow the rule for gravy though and use 1/2 the amount for cornstarch (1 1/2 Tbsp cornstarch = 3 Tbsp flour). If you do end up using cornstarch, please let us know how it turns out

  17. Udi's is by far the best gluten free bread we have tried. (Other than what I bake). I was thrilled today to find that they just started carrying Udi's today! Yea, now I do not have to drive to the health food store 30 miles away.
  18. For anyone that is interested, the Big Lots near me has one pound packages of Sam's Mills Corn Spaghetti (package labeled gluten free) for $1.20 per package. The store I went to has two areas with pasta. The Italian section and the specialty food section. This pasta is in the specialty foods section near the thai noodles.   19. I just started using these. My daughter likes them better than Tinkyada. I usually buy Sams Mills brand online. The lasagne corte are similar in shape to egg noodles. Once (and only once) my daughter found them at Big Lots for 99cents for a one pound bag. I keep looking hoping they get them again at this price, but so far no luck
  20. Progresso has a creamy mushroom soup that is gluten free. I used it last week to make tuna noodle casserole (with gluten free corn pasta). Instead of adding a can of soup and a can of milk I just put in the can of Progresso Soup with no additional liquid (it is not as thick as Campbell's condensed) and followed the rest of the recipe as I always have. ...
  21. My daughter enjoys Hormel Naturals cold cuts. This brand does not contain nitrates which is good because my daughter reacts to nitrates in much the same way as she does to gluten. She has had no problem with this brand and since it comes prepackaged we do not have to worry about cross contamination. They go on sale quite often and you can also find coupons...

  23. I bought red handled utensils, plasticware with red lids, and a red colander. Everyone in the house knows that the red items are never to be used for anything that may contain gluten. I have two sets of condiments and peanut butter. I take a marker and label the lids "gluten free" so the gluten eaters are aware they cannot use these items. Good Luck!...
