ARCHIVED Gluten Free Pizza Tonight!
wildwood replied to gluten free overseas's topic in Gluten-Free Recipes & Cooking Tips
Yes, you can use Greek yogurt or sour cream. Just dilute it with milk so it is a similar consistency to buttermilk. It is usually about a 75/25 or 50/50 ratio depending on how thick the yogurt or sour cream is. I hope you enjoy! I am looking forward to trying the pizza crust recipe. I am curious to see the difference in texture using the cornmeal. -
ARCHIVED Gene Testing
wildwood replied to wildwood's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I did try to have it sent to me at a relative's address, but since my billing address for my credit card is a New York address I was not permitted to place the order. -
My husband and I want to have the gene test to see our predisposition to celiac disease. When we bring it up with doctors, they essentially blow us off stating that the test is too expensive since it will not be covered by insurance yet they cannot tell us how much it is. I only want a ball park of what to expect as we want to have this testing done. Does...

wildwood replied to bridgeofsighs's topic in Introduce Yourself / Share Stuff
I have 3 appliances/gadgets that I enjoy. (yes I did say enjoy, lol!) 1. crockpot, 2. salad spinner, 3. food saver. I use the food saver quite a bit now. I make jambalaya, chili, etc. put leftovers in the bag and freeze before vacuum sealing. We bring these camping. We then boil water over the fire and use them as boiling bags. Yummy, nothing like my... -
ARCHIVED 4 Day Hiking / Camping Trip
wildwood replied to Katrala's topic in Coping with Celiac Disease
How about gluten free beef jerky, string cheese, individual Gluten Freeda oatmeal packets, lara bars, etc? These items would not take up a great deal of space. Also, you can check out minimus.biz. They sell individual travel packets of gluten free soy sauce, salad dressing, etc. Would the kitchen be able to prepare hard boiled eggs for you? It sounds... -
ARCHIVED Going To Las Vegas On Monday
wildwood replied to Dennis429's topic in Traveling with Celiac Disease
Craftsteak and Wolfgang Puck's restaurants at the MGM Grand were wonderful. At Craftsteak they had the spring tasting menu (we were there in spring 2010)the chef made virtually the whole menu gluten free so my daughter and the rest of us were able to enjoy a family style meal. It was expensive, but well worth it and absolutely delicious. -
The What's For Dinner Tonight Chat
wildwood replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
I got called in to work a temp job today so it will be a super easy "hamburger goulash". I chopped an onion, put it in the crock pot with a pound of ground beef and a can of Progresso cream of mushroom soup and some additonal mushrooms. I will serve with Sam's Mill corn bow ties or microwaved baked potatoes and a yet to be named green vegetable. Have not... -
ARCHIVED Simple Meals & Snacks With Dairy
wildwood replied to KevinG's topic in Gluten-Free Recipes & Cooking Tips
We like are dates filled with cream cheese and peppadews filled with fresh mozarella. The peppadews are small slightly spicy peppers that can be found at the mediterranean bar at Wegmans. They make a nice simple hors d'oeuvre also. With the dates and cream cheese you can also put an almond or some other type of nut in there with the cream cheese. I also... -
ARCHIVED Went To The Hospital Last Night
wildwood replied to jess-gf's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I noticed the food you ate included ham and bacon. My daughter has the same reaction when she eats nitrates as she does if she is accidentally glutened. Nitrates are in bacon, hot dogs, corned beef, some cold cuts, and I am not sure as we do not eat it, but maybe in ham. I don't know if you eat these things often, but just thought I would throw that out... -
ARCHIVED Flours That Can Be Purchased At Asian Or Oriental Grocery Stores
wildwood replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
I find rice flour can be gritty. I found that my local oriental grocer carries rice powder. I use the rice powder in place of rice flour in some of my flour blends. It is not gritty at all. -
ARCHIVED How About Bread Crumbs?
wildwood replied to TPT's topic in Gluten-Free Foods, Products, Shopping & Medications
I like the Schar bread crumbs the best. They are pricey, but the little bag does go a long way. I also use Rice Chex ground up on their own or if I need to stretch the Schar crumbs, I combine the Rice Chex crumbs and Schar crumbs. If I have any bread failures, I grind those up into bread crumbs and put them in the freezer until I am ready to use them.... -
ARCHIVED Need A Flour Substitute For Sweet Potato Casserole (Recipe Included). Help Please.
wildwood replied to jet731's topic in Gluten-Free Recipes & Cooking Tips
I also thought cornstarch would work since it is available anywhere. I might follow the rule for gravy though and use 1/2 the amount for cornstarch (1 1/2 Tbsp cornstarch = 3 Tbsp flour). If you do end up using cornstarch, please let us know how it turns out -
ARCHIVED Pasta Alternative?
wildwood replied to SayJay's topic in Gluten-Free Recipes & Cooking Tips
My college age daughter prefers Sam's Mills corn pasta to rice pasta although she does like the rice pasta also. The key seems to be rinsing it when you drain it otherwise it tends to stick together. I usually find the Sam's Mills at Big Lots for 1.20 a pound which is not too bad. They do not have it all the time so I stock up when I find it there. Have... -
ARCHIVED My Wegman's Has Started Carrying Udi's!
wildwood replied to wildwood's topic in Gluten-Free Foods, Products, Shopping & Medications
If they do not have it at your Wegmans, perhaps you could request it. They always seem willing to accomodate if they can. They literally just started stocking it yesterday. Good Luck and if you are able to buy some I hope you enjoy it as much as we do! On another note, Udi's has a website with a store locator. Wegmans is not listed yet. I was surprised... -
ARCHIVED My Wegman's Has Started Carrying Udi's!
wildwood posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Udi's is by far the best gluten free bread we have tried. (Other than what I bake). I was thrilled today to find that they just started carrying Udi's today! Yea, now I do not have to drive to the health food store 30 miles away. -
ARCHIVED Sam's Mills Corn Pasta
wildwood posted a topic in Gluten-Free Foods, Products, Shopping & Medications
For anyone that is interested, the Big Lots near me has one pound packages of Sam's Mills Corn Spaghetti (package labeled gluten free) for $1.20 per package. The store I went to has two areas with pasta. The Italian section and the specialty food section. This pasta is in the specialty foods section near the thai noodles. I do not know if it is available... -
ARCHIVED This Makes Me So Mad!
wildwood replied to macocha's topic in Gluten-Free Recipes & Cooking Tips
I just started using these. My daughter likes them better than Tinkyada. I usually buy Sams Mills brand online. The lasagne corte are similar in shape to egg noodles. Once (and only once) my daughter found them at Big Lots for 99cents for a one pound bag. I keep looking hoping they get them again at this price, but so far no luck -
ARCHIVED This Makes Me So Mad!

Progresso has a creamy mushroom soup that is gluten free. I used it last week to make tuna noodle casserole (with gluten free corn pasta). Instead of adding a can of soup and a can of milk I just put in the can of Progresso Soup with no additional liquid (it is not as thick as Campbell's condensed) and followed the rest of the recipe as I always have. ... -
ARCHIVED Simple (And I Mean Simple) Gluten-Free Packed Lunches
wildwood replied to flutterby's topic in Coping with Celiac Disease
My daughter enjoys Hormel Naturals cold cuts. This brand does not contain nitrates which is good because my daughter reacts to nitrates in much the same way as she does to gluten. She has had no problem with this brand and since it comes prepackaged we do not have to worry about cross contamination. They go on sale quite often and you can also find coupons... -

ARCHIVED gluten-free Cooking
wildwood replied to lakegirl410's topic in Gluten-Free Recipes & Cooking Tips
I bought red handled utensils, plasticware with red lids, and a red colander. Everyone in the house knows that the red items are never to be used for anything that may contain gluten. I have two sets of condiments and peanut butter. I take a marker and label the lids "gluten free" so the gluten eaters are aware they cannot use these items. Good Luck!... -

ARCHIVED Price Chopper gluten-free Products
wildwood replied to AlysounRI's topic in Gluten-Free Foods, Products, Shopping & Medications
They have started selling Starfish frozen gluten free breaded fish fillets in the seafood dept. It is kept in the freezer next to the fish counter.. They have cod, haddock, and one other that I cannot remember. As a side note, I did not realize my Price Chopper carried gluten free pasta. I kept looking in the healthfood section. When it was not there...
