  1. My daughters gave me this book for Mother's Day and it looks as though it has some really good recipes. I cannot wait to try some of them. For the most part the recipes I have looked at use easy to find ingredients that happen to be gluten free.
  2. I look at the Sunday grocery store circulars and see what meats, veggies, etc. are on sale and plan my meals around the sale items. If there is an especially good sale on meats or chicken, I buy a little extra and freeze. I do not buy very much processed food. The gluten free items are so expensive so I try to avoid them when possible. As a college student...
  3. Thanks so much for posting this. I checked the link and there is an Angel Food Ministry in my town. I am going to stop on my lunch hour Wednesday to place an order. The gluten free breaded chicken I occasionally buy in the store is so expensive. I can't wait for my daughter to try this. Thanks!!!!!
  4. They should really repeat the biopsy at no charge to you since it is their fault there was not enough of a sample. My daughter had an endoscopy which came back normal. The thing is they did it before her celiac panel came back. I don't think they took her symptoms seriously at first. When the lab panel came back extremely positive, I got a call that...
  5. Count me in. I have two rhubarb patches and am always looking for new recipes to try!!
  6. Roda, thanks for the information and the link. I had inquired about these on another post. I looked for them last night before reading this post and could not find them, but it is because I was looking in the the cracker sections. I checked the link and my supermarket does carry them so I will surely check out the rice cake section next time I am there...
  7. What are Corn Thins and where do you find them?
  8. I find it so disturbing that an endoscopy is still used as the "gold standard" by so many physicians. Especially since damage can be so patchy. My daughter had GI symptoms for several years and each of the doctors she saw tried to convince her it was stress. She finally went to a GI and saw a nurse practioner. The NP decided to recommend an endoscopy...
  9. Hi Jeff, I am writing under my wife's account. She asked me to see if I could share some weight gaining tips with you. I am 49, 6' and 175lbs, I have a small frame. If I don't exercise I would drop to about 160-165# in the matter of a month or two. I was always the skinny guy in High School and joined the Navy at 6' 143# at 19. After boot camp (8 Weeks...
  10. There is a celiac vegetarian forum -- vegiac.com. You may find that helpful. I go on there to look at recipes. We are not vegetarian, but my older daughter's fiance is. When my younger daughter comes home from college to visit I like to be able to prepare a vegetarian/gluten free meal to meet both of their needs. Since my daughter was diagnosed (she is...
  11. I made his last week and it is delicious. I used real mashed potatoes. I too would add more onions next time. My family asked me to be sure to make it again. Thanks for the recipe!
  12. Now that you mention it you are right. The crust does resemble the flavor/texture of a Lara Bar.
  13. I am in the Syracuse area. I love Ithaca. It is gorges!!!
  14. I saw this recipe on the local cable news channel. I have not been thrilled with the results of my attempts at recreating a traditional pie crust using gluten free flours so I thought it would be fun to give this a try. I made it this weekend and we enjoyed it very much. No Bake Apple Pie 8 oz. chopped pitted dates 1 1/2 cups chopped pecans 2 Tbsp...
  15. I want to thank you for advising a bone density test. At your suggestion, my daughter had this done last week and the result shows she has some mild osteopenia. Thanks again.
  16. The same thing happened to my daughter recently. She has been told for years she has psoriasis. She was dx'd celiac in August and is now following gluten free diet. Her rash became much better after a month or so on the diet. She then started taking a vitamin supplement in early November and the rash came back with a venegance. I called the manufacturer...
  17. I feel the same way. If you are comfortable providing a pm with your address , I would love to help you in some way. I know sometimes we are uncomfortable accepting help. I went through the most difficult time in my life a few years ago. It was very difficult to accept help. The best advice I received during this time was "Let people help you, this is...
  18. Thanks for the advice. My daughter was able to get released from her housing contract, but could not find a suitable apartment that is available. Now it is almost the end of the semester and she is thinking she can manage one more. She will move into her own place for the fall semester. She has some roomates lined up already. The school did offer her...
  19. I would appreciate any tips you come up with. I have a couple of ideas for you that my daughter has come up with. Rice Chex are a mainstream cereal that is gluten free so you can get them at most any grocery store. I actually went to a Super Walmart for the first time this weekend and they were $1.66 a box! She puts those in baggies to carry around with...
  20. I do not know if you are in the position to buy a bread machine since you are a college student, but I have found the breads I make in there are so much better than the store bought. This might be a solution for you since you do not have a store with gluten free offerings nearby. I have only bought two loaves from the store and they were like cardboard even...
  21. I am so glad things are going well for you in college. I can imagine how great it must be to have met others with celiac disease. I am sure the support is invaluable. My daughter said she met two people in her dorm that have celiac disease. Unfortunately they are both in denial and refusing to eat gluten free. I know everyone goes through different stages...
  22. LOL!! Maybe she would consider it. She called me yesterday to tell me it was snowing at her campus. Sunshine might tempt her
  23. My daughter is a freshman in college and while food services does their best to accomodate her she has had many cc issues. We are looking into accomodations for her (I am hoping we can have something in place next semester) so she can have her own kitchen. She is tired of not having control and having to deal with not feeling well after eating something...
  24. Thank you for your kindness. I wish you and your family the best also. As a mom, I don't think you ever outgrow the hovering stage She is doing very well and seems to have things as under control as she can. She has taken this all in stride and seems to be doing very well. She amazes me every day!!!
