Gluten Free Egg Noodles??

I recently used Jovial lasagna noodles. I boiled them for 12 minutes. I then cut them into strips similar to egg noodles. Both of my grandchildren loved them (one celiac, one not). Perhaps it is nitrates in the cold cuts you are reacting to. My daughter reacts to nitrates in the same way she reacts to gluten.
