  5. Just my personal experience What you described sounds like mucus. I still see that when I get glutened. Before I stopped eating gluten, I also saw little white blobs that looked like corn... only I wasn't eating corn. I assume that was fat. My stool was also greasy and difficult to flush.
  6. Ice cream! Also, coconuts (the oil is good for cooking, the milk is good in smoothies, Thai food, etc...), seeds, nuts, and nut butters. 1 cup of almonds has over 500 calories. These foods are not only high in calories, but good for you too... lots of trace minerals and antioxidants.

  9. Have you ever had your TSH checked? Autoimmune hypothyroidism is much more common in celiacs than the general population... that could be another cause of your fatigue.

  19. Focus on high-quality calories... eggs, coconut milk (coconut oil is great for cooking), olive oil, nuts, seeds, nut butters, avocado, etc... Even if you can tolerate non-gluten grains (like corn, rice, millet, soy), they don't have as many nutrients and your body has to work pretty hard to digest them.
