  1. Here is a link to the crescent roll recipe I used. I want to say I used the Better Batter flour also. It has been a long time since I make them and I mix my own flour now. I'll have to try it with my own flour blend and see how it turns out. Open Original Shared Link
  2. My kids were so excited to sort through their candy. We went through and took out everyting that we knew they couldn't have. I had told them I would give them .25 cents for every piece they couldn't eat. Let's just say I'm out almost $15.00. Ugg, I'm regretting that one...they were excited though.
  3. As far as the pasta everyone in my house hates any of the rice based pastas. I buy Sams Mill corn pasta and everyone likes it a lot. I have found though that the corn pasta is better for hot dishes rather than cold ones. When cold it can be a bit chewey. I can get a 16 oz. package for around $2.00-$2.25. I usually buy it from a local Mennonite store...

  5. If you are celiac then yes most of us would react to the candy bar because of the barley malt in some way. Reactions vary for each person. One of my bad reactions was from a regular milkyway(they have barley malt also). Last halloween I raided the kids candy stash(they were not gluten free at the time). I had been eating the candy I knew was safe and...
  6. The reference range would help, but given that it is flagged "H" means it is high. You got a positive blood test. What you need to decide now is if you want to have a scope and biopsy next. If you are then keep on eating gluten until you finish all your testing.
  7. We are talking about hot dogs or similar wrapped in crescent rolls right? If so, I have a gluten free crescent roll recipe that I have used sucessfully. I'm at work right now but will post after I get home in the morning. Oh, in case you were wondering why I asked it is because I grew up knowing pigs in a blanket as cabbage rolls.
  8. I've been reading this topic and really couldn't have said anything better than what everyone else has. I was starting to get worried about you though and was glad to see you posted. I'm sorry you are dealing with all these feelings right now. I know it won't replace dinner rolls but here is a recipe I make frequently. We eat the hound out of them. They...
  9. Why not have your regular doctor run the celiac panel now? That way when you have your GI appointment you'll have that done.
  10. I'm sorry you and hubby are having a hard time. I know it was a big change for my husband at first. There was a lot to learn. He made mistakes but was willing to do what he needed to to keep me safe. Now he is a pro! I feel really fortunate that he never doubted my diagnosis. He did have a problem commiting my children to gluten free without evidence...
  11. This is exactly how I feel. You just were able to word it better obviously. This is not what I want to happen with me or either of my boys, hence why I am so adament on doing it, for a lack of a better term, "all or nothing." I'm not saying we are perfect. We still get an occasional CC accident or make mistakes.
  12. Me either. To me it's not any different than making sure you cut up your fruits and veggies first on a cutting board before cutting meat. And not contaminating surfaces with raw meat and disinfecting afterward. That seems so obvious to most people. When I relate it to gluten I get a blank stare(not from hubby, he is great and understands) from people...
  13. I guess I got carried away with my thoughts when the GI said this to me. It was almost like she was trying to tell us it was allright to cheet once and awhile and it would be O.K. That's what I didn't agree with. I think I was so insistant because I didn't want my 10 year old to think it was alright to cheet. I don't usually think so black-and-white on...
  14. What your doctor recommended to you is so unprofessional. Given your positive blood work and him suggesting that you have latent celiac(celiac disease that hasn't caused villous atrophy) disease, I can't believe he told you that. Six weeks, in the grand scheme of things is not very long. It can take months to start feeling better and sometimes up to a...
  15. My oldest son's GI doctor said the same thing about gluten intolerence. I told her in a polite way that I totally disagreed with her on that point. My husband also agreed with me. If you are going to go gluten free IMHO it is all or nothing. I do not allow my oldest son to cheet at all, that's not to say he hasn't had a CC accident though. I like to...
  16. I don't know my genetics and I am very gluten free oat sensitive. I don't allow my youngest son to eat oats either. I'm not certain of his sensitivity now, but as a baby he would get a bad rash on his head anytime he or I ate oats. I don't think my oldest son is oat sensitive, but he doesn't eat anything with them in. He has tolerated oat contaminated...
  17. I'm sorry you didn't get the answers you were looking for. But let me ask you a question: When you were gluten free those few months did you notice any improvements? Even though all your testing is negative for celiac, it still doesn't rule out non celiac gluten intolerence. My son's allergist told me that you can do all the testing you want, but it won...
  18. You really need to go back to basics and eat a clean diet of fresh fruits, veggies, meats, etc. In order to get rid of cross contamination issues it probably will be necessary to not eat out and not eat at the hospital cafeteria. Unless you specify your needs about CC they won't have a clue. And even then they may still not get it fully. I wouldn't trust...
  19. My 6 year old became more emotional and had worse temper tantrums for about 2 weeks after he went gluten free. I think he was having gluten withdrawl. It started to level off after that. It was around the 2 month mark that we realized that the moodiness, temper tantrums, and his obcessive behavior over his shoes were gone! You may want to go ahead...
  20. I would check with a manager at the zoo and explain your situation. Are there places in the zoo to get food? I can't think someone would spend the whole day at the zoo and there not be anything there to eat. I mention this because if you talk to someone tell them you can not safely eat anything at any of the vendors because of severe food allergies. See...

    ARCHIVED Family

I wouldn't call myself a super sensitive..YET! However I am finding I am becoming more sensitive to lower levels than previous. As far as my immediate family, everyone is supportive. Myself and both my boys are gluten free. I am finding that my youngest(who is celiac) is getting more sensitive to low levels of CC also. Older son(non celiac gluten intolerent...
  22. When you go for the blood tests you need to have the following done: total IgA, IgA/IgG tTG(tissue transglutaminase antibody), IgA/IgG AGA(anti gliadin antibody), IgA EMA(antiendomysial antibodies) and IgA/IgG DPG(deamidated gliadin antibody). You also need to have at least 8-11 tissues samples taken from differnent areas in the small intestine (duodenum...
  23. With damaged villi on biopsy, that is diagnostic of celiac. You may want to consider testing for all first degree relatives (mom, dad and siblings). The risk for celiac increases to 1 in 22 from 1 in 133. The blood tests for you would be the same as your daughter. Mushroom listed them above.
  24. I'm so sorry you are having a rough time. My 6 year old started having behavior issues before he was diagnosed(positive blood work and no biopsy). He was increasingly more emotional, the slightest thing would set him off in an angry or crying fit, he would have temper tantrums, and became almost OCD like when it came to shoes and would throw daily tempertantrums...
