  1. Strict elimination diet is the only way I finally found most of my intolerances -- had a few pass the trial during elimination. Point being when you eliminate all but a few safe foods it is much easier to determine which food is causing problems -- if you trial them at least three days - I suggest a week or more apart. Legumes surprised the heck out...
  2. Welcome Denine and Family- Transition is the toughest part - then comes healing. You've already been given great starting info. Ask questions and read as much as you can - it really does speed the toughest part of this along. Oh - I strongly agree that you, Dad and any siblings get tested soon and again at regular intervals - celiac disease...
  3. Time - it all takes time. Diagnosis took 43 years Transition took many months Family/Friends "getting it" took a few more years Knowledge to stay healthy - heck I am still learning!
  4. Last night men over-ruled the pork chops in favor of steak - go figure Tonight I'm doing K's pork chops along with a new to us - very old cornbread recipe and cucumbers in herb sour cream sauce.

We live in sunny southern california -- basically a desert with no water of our own -- the past three years we have grass in the back yard from around October until June -- as we no longer water the lawn.   9. I agree with Nicole. Your Total IgA is within normal range -- the positive DGP IgG is enough reason to remove ALL gluten (IMO). Is there anyway you can move the follow up - up? Is the follow up with Primary or GI? If you are considering an endoscopy - try to get it done as soon as possible -- blood doesn't always show the whole picture. Hang...
  10. I think your plan is perfect! A gluten challenge does not guarantee positive pathology from endoscopic samples. The current challenge would be enough reason to remove all gluten. I do think an endoscopy is valuable - even after gluten removal -- if there is any way to move this up - I'd suggest that, but do not believe a 6 week / 4 slices of bread...

  14. Thankfully -- we will be hearing more and more of our Innate Immune System - the best researchers are getting closer to what we all have figured out individually. For now - if you are here and other places researching possible solutions from your food - you are way ahead of the most advanced research ... IMHO.

  18. Completely agree on the bone broth and fermented foods (these only if you can tolerate) - sadly I cannot - I do make mass quantities of bone broth to use alone, in other soups and sauces. Here is what I have found - there is a grieving process that accompanies the loss of more and more foods. Now that I am down to a very - VERY - small list of safe foods...

Feel better Addie and quesadillas are not lazy -- throw a little something on top and it looks gourmet Turkey Soup as planned with many, many mini muffin tins of pamelas bread -- usually treat hubby to fresh french bread on turkey soup night -- but some family along with son's band is here -- do not trust all those gluten eaters to use care
  23. Hi Kiki! Not sure if I already posted this....I also cannot do canned tuna -- even packed in water -- due to intolerance to histamine containing and inducing foods.
