  1. I'd love to have a recipe just like that...we used to make ghardelli brownie mix and added two kinds of choc chips to make them sin-ful....am hoping the new betty crocker mix is soft and chewy - not cakelike, but would also love a recipe if anyone has had good luck with soft and chewy!

  4. At 18 months my grandson went gluten-free when my docs pinpointed possible Celiac Disease for me. He has had a variety of food allergies the entire time he was breastfed. He has not been diagnosed, but after going gluten-free his poop was solid for the first time in his life.

I have nothing to help explain...can only tell you I too am at 6 weeks and the past 3 weeks have had very severe arthritis -- this was only mild before going gluten-free -- am hoping this will improve in the coming months...Celiac Doc is going to run more tests on me to look for reasons other than Celiac for my symptoms... yippee...can't wait more tests ...

There were great suggestions in the blog I linked below for breakfast...I tried the flourless egg muffin recipe someone suggested...they are easy to make in advance and then microwave when ready to eat. I like them with a gluten free english muffin ( I buy glutino's - these are expensive, but the only gluten-free prepared food I buy - gotta treat yourself...
  7. We wait for a hard rolling boil then cook for the minimum time on directions...we add olive oil to the water and rinse the pasta thoroughly with hot water before eating or adding to cassarole. Good Luck!
  8. I'm nearly done reading her book. I think she has described celiac disease in a very clear manner. She does point out that going gluten-free can be a very healthy lifestyle change for anyone, but does explain it to be the only treatment for for Celiac Disease. That it is not a choice for Celiacs if they want to be healthy/improve their health. ...
  9. I gave them a try because I saw your link...not bad...not great, but not bad. I prefer the rigatoni and other shapes to the angel hair/spaghetti...as the texture is firm...it was easier to chew the wider shapes. I've tried them with several sauces...but my favorite is quick mac and cheese...just rinse, melt some soft cheese, add a few spices...easy lunch...

I sound very similar to you...except that I wasn't diagnosed until this year at 43...my symptoms have worsened substantially over the past ten years...I was so happy to read your entry and see that perhaps Celiac is getting on some docs radar. As for the cross cont issues...our home is taking moderate changes first...we don't share butter, pnut butter...

  13. Celiac has a variety of symptoms...not all are the commonly know ones...best to see a GI that "wants a possible celiac case"...these words came from the primary doc that diagnosed me after many years of mis/undiagnosed problems. Welcome!
  14. Hello Kath- I am a recently diagnosed celiac...there are others on this board that can give much better advise. This is what I have learned in the past two months...celiacs are very hard to diagnose...it is not a matter of the docs missing it..it is a matter of US Docs are not trained to look for celiac. The blood tests are often misleading...I suffered...

  17. Thanks for letting us know that she would be on Larry King...what a wonderful job she did shining a light on Celiac Disease. Looks like those calls to Larry worked...did you catch the ? some say that Celiac is and auto immune disease, not an allergy.... way to go celiac.com

Another overweight celiac here...in fact my chief complaint to docs over the years was that I keep gaining weight with no explanation...I've gained 60 lbs in 20 years and for most if not all of those I was eating very well balanced meals and exercised a good amount. Every single doc dismissed it usually along with a wink, wink look of - sure, you are eating...
  19. I sound similar to Mrs. Smith...most these tests along with pelvic us to rule out ovarian cancer and cortisol levels to rule out other things. Many of these tests I had done every few years for the past 20 or so...always the same...picture of health...only slightly anemic...have some iron...take an anti-depressant or see a shrink...I KNEW I GOT DEPRESSED...

  21. I had a few episodes like you are describing during these first few weeks...after double and triple checking what I had eaten it remained a mystery. I've also had some extremely bad evenings with severe joint paint...this has always been a symptom for me...but not as bad. Anyway, the past few days I have been feeling stronger and am hoping it is all part...
  22. That is great news! Thanks for sharing. We have family and friends that are sad for me that the only treatment for celiac is diet....I'm constantly telling them...NO...this is good news. All I have to do is change my diet...no drugs, no surgery and I'll get healthy just from adjusting our food. This is GREAT NEWS!

Our house has settled a bit and I have become very good at making sure I pack a lunch and or snacks whenever I go out...makes it a bit easier to be sure I have food with me...don't always use it but have it there to quell the anxious moments when trying to figure...

I had a few friends call me with the news of this book...a couple of the folks that called me were the type that didn't really understand that I have an actual disease and didn't just decide to try eating gluten-free to see if I get better.   25. Ditto...clothes fit fine, even loose in the AM, tight by 2pm and unwearable by 6pm...fun, fun, fun! I'm at 41 days and have noticed that the bloating is slightly less...hope it's not my imagination!
