  2. I had an endoscopy that confirmed celiac. My blood tests only marginally indicated celiac. Everyone is different. I'm 44 and there was significant damage to my small intestine. I'll be having a follow up biopsy at a year -- docs are confident that I can repair my body with diet. I am glad that I had the endo, but we've taken a different path for my kids...

We did not replace our utensils, pots, pans, tupperware, etc. We ran everything possible thru dishwasher on longest heat cycle and washed other items very well those first few weeks. I did buy a second cutting board for our gluten-free items. Our house has less and less gluten, but my husband and one of my kids still eats reg bread...
  4. Hmmm.... Keep it SIMPLE at first, meat, veggies, fruit, rice, eggs, etc. You can do this. You will make mistakes, but will learn quickly. You will be frustrated, but will learn quickly. You may have some improvements, then some setbacks...and eventually more and more improvement Take it one day, one shopping mission...

  6. First few weeks of gluten-free one of my first changes was true hunger...I don't think I've been really hungry for a meal in years. A few weeks after that I became concerned that all the food would result in weight gain...opposite seems to be true...my weight seems to be improving and the dire hunger has subsided a bit...although still eating much more...

  8. I agree...simplify! I'm at 3 months. Had a very rough time from about 3 weeks on - health wise. My symptoms got worse during that time....we became more diligent with cross-cont issues and ate simple foods - eggs, meat, veggies, rice, fruit. Hang in there - just takes time - I have only slightly improved, but am very hopeful for more improvement...

  10. I'm 3 months gluten-free. Have seen some improvement with bloating/gastro issues...am confident this will continue to improve. Docs are stumped by my EXTREME heat intolerance...it is like my internal thermostat is broken. Anything over 75 or even lower with humidity and I am cooked! I've had good luck with Johnsonville (suggested by others on this site), Aidells (listed NO GLUTEN on label) and just bought Cantella's based on ingrediants, but haven't tried yet I too have bad reaction to tomato sauces -- hoping this improves with healing, but rarely test it.   16. Symptoms vary, but endoscopic biopsy is the gold standard of Celiac Diagnosis. If you have eaten gluten your whole life it stands to reason that it will take time for your body to heal.   17. Ditto....trust your instinct. Blood tests for Celiac Disease rarely diagnosis, only indicate possibility of Celiac - an endoscopy is needed for confirmation. If you already know there is an adverse reaction to gluten you don't need to know anything else with a 3 year old. Nearly every time I have search a specific item I have the information I need...whether it is gluten-free and whether other celiacs are able to eat it or not...

  22. Not sure if you are in a dorm or apt. If you don't have a kitchen...maybe you can microwave or toaster oven some of the items I suggest. We are replacing our gluten containing foods...this does take some time to figure out and understand this would be difficult to learn if we were not already used to cooking our own food...so it is best to keep to simple...

  24. I've had the restless leg thing...but not consistently. I do have problems with my hands when I sleep with them in certain positions. I've also had a great deal sleep troubles over the past 20 years.
