  1. Got a return email from the mfr. Apparently not gluten-free. Ok though, it's easy enough to make from scratch, and should keep in the fridge. Thank you for your recent inquiry via our website regarding Mizkan Ajipon. This item is not gluten free as it contains soy sauce made from wheat. Sincerely, Reiko Watanabe Mizkan Americas
  2. I can relate. You've done such a wonderful job being patient. It's really easy to just get angry in a situation like that. I'm sure your husband is supportive, so maybe he can help. For months my wife thought CC was just in my head too. However, knowing how sick I was getting from CC, then seeing my horrible symptons go away (quickly) when I started...
  3. Thank you kindly. It's good to know.
  4. I really love the Udi's bread, we get from our local gluten-free store! Yum! It's worth trying to get, and my "glutenoid" wife and kids think it's just like real gluten bread, so I have to lock it up. The price tag is a dead giveaway though... It's never given me symptoms, just the wallet hurts, when everybody eats MY bread! I'm pretty sensitive...
  5. What about pickles, frequently used in potato salad? Are all dill pickles gluten free? Anyone know current guidelines for ingredient listing? If it doesn't say "distilled vinegar", could "vinegar" possibly mean there could be "malt vinegar" in the product, or does malt vinegar have to be listed if it's used?
  6. Chelated Mg is better for the tummy/intestines, or even magnesium citrate (this isn't citric acid) is better than just plain old MOM (Milk of Magnesia). But it could be helpful, if you're trying to avoid some ingredient in the other supplements. Unchelated (bare Mg++ ions) tend to mess with your gut. MOM is just plain old magnesium hydroxide, Mg...
  7. What "gluten enzymes" are you referring to? I wasn't aware of enzyme supplements or medication/treatment that enables celiacs to "neutralize" Glutenin and Gliadin, the proteins that make up gluten. Would be nice though. L-Glutamine is a single amino acid, not an enzyme. Open Original Shared Link
  8. Just wondering if anyone knows of a prepared brand of Ponzu sauce that is gluten-free. I found one (Mitsukan brand) labeled gluten-free, but silly that it lists "wheat" (soy sauce) in the ingredient list, with "Gluten Free" right after. Open Original Shared Link
  9. Having glutenoid wife & kids who like to make their own sandwiches, I really like mayo in squeeze bottles.
  10. I really like quinoa as a substitute for many things, as it actually tastes good, and then it's more nutritious than some of the other "starchy" substitutes. I prefer pasta made from quinoa/corn over other gluten-free pasta, and wonder if there's a gluten-free couscous made of that. Here's a recipe for Tabbouleh, been wanting to try a variation soon....
  11. Taking a shot--haven't read anything yet. Just considering starches, proteins, and fats... Most gluten-free flour substitutes are mostly starch, so should be fine at room temp. Proteins may/may not need to be refridgerated. Fats will go rancid much quicker though, so I'd refridgerate/freeze the almond meal. Potato starch & sweet rice/tapioca...
  12. I'm very sensitive to gluten--my 3 yr old (glutenoid) can make me sick for a couple days by touching my toothbrush. I have a breadmaker that I frequently used for years, prior to celiac disease. I used a 1:2 dilution of bleach to scrub and wash the breadmaker, and haven't had any problems. My education/background is biochemistry. Treatment with bleach...
  13. Since I was kid, I've always like roasted chestnuts. Here's a good recipe. Make sure you 'x' the nuts before roasting. When I was a kid, one of them exploded in my face. I was lucky to be able to use my eye after a couple days. Open Original Shared Link I'd love info on using this a flour! Thanks.
  14. I also prefer a vinaigrette, or even a bottled Italian dressing. "Ranch Dressing" is a misnomer, as the real flavoring is MSG. I don't serve "MSG Dressing" to my kids.
  15. I am relatively new to the gluten free diet, and still trying to figure things out for myself, mostly regarding cross contamination, as the rest of my family is still fixing gluten food in my kitchen. My background is biochemistry, and I must say that wheat flour, or more specifically the gluten that it contains, is responsible for the wonderful characteristics...
  16. Yes, a pressure canner is required for pumpkin. However, it is recommended to can pumpkin cubes only, as it may not be safe to can pureed pumpkin, even with a pressure canner, as the risk for Clostridium botulinum growth (botulism) may be too high. Open Original Shared Link
  17. Pumpkin is hard to can safely, as it contains little acidity, which aids in controlling bacterial growth. This is why your book has no instructions, but says to freeze cooked pumpkin. If you're willing to try it, you can can pumpkin cubes, but I wouldn't recommend canning pureed pumpkin. Here are some canning instructions from a canning website. ...
  18. Gluten free "Panko" would be awesome to have on hand. Please post a link if you know where to buy it online. Thanks!
  19. Hey Purple, I would be very interested in your cookie recipe. I haven't had a cookie yet, since my diagnosis earlier this year. Thanks!
  20. I like the gluten-free banana bread idea. If you can eat eggs, you could make a platter of deviled eggs, easy to make gluten-free. I recently made a smoked salmon dip to serve with rice crackers at a gluten-free picnic. It went quick. ~4 oz smoked pacific salmon, flaked. (I sometimes make my own by marinating the salmon with 1.5 tsp liquid...
  21. Bumping the thread, since it's been a while. I'm looking for convenient freeze dried meals that are gluten free. In the past (pre-celiac), I always used Mountain House for pack trips. Open Original Shared Link I'd like to continue packing light, but need gluten free. I'm willing to make my own, if I can find recipes to substitute for freeze dried...
  22. Great news. We like cruising and enjoy FOOD, and (pre-celiac) really enjoyed Celebrity. As a new celiac, I was thinking I'd have to give up restaurants, cruises or vacations in general. I'm finding I can still live happy. Thanks for the info!
  23. I've beening enjoying both gluten-free pizza's at Louie's and Chicago Connection. I realized last night that I enjoy Louie's pizza more than CC's the day after. Got a slice in the toaster now... Glad to find this website. I suffered from painful/embarrassing symptoms for more than year, and was fairly recently diagnosed a celiac. Having a background...
