Got a return email from the mfr. Apparently not gluten-free. Ok though, it's easy enough to make from scratch, and should keep in the fridge. I really love the Udi's bread, we get from our local gluten-free store! Yum! It's worth trying to get, and my "glutenoid" wife and kids think it's just like real gluten bread, so I have to lock it up. The price tag is a dead giveaway though... It's never given me symptoms, just the wallet hurts, when everybody eats MY bread! I'm pretty sensitive... -
What about pickles, frequently used in potato salad? Are all dill pickles gluten free? Anyone know current guidelines for ingredient listing? If it doesn't say "distilled vinegar", could "vinegar" possibly mean there could be "malt vinegar" in the product, or does malt vinegar have to be listed if it's used?

Chelated Mg is better for the tummy/intestines, or even magnesium citrate (this isn't citric acid) is better than just plain old MOM (Milk of Magnesia). But it could be helpful, if you're trying to avoid some ingredient in the other supplements. Unchelated (bare Mg++ ions) tend to mess with your gut. MOM is just plain old magnesium hydroxide, Mg... -

What "gluten enzymes" are you referring to? I wasn't aware of enzyme supplements or medication/treatment that enables celiacs to "neutralize" Glutenin and Gliadin, the proteins that make up gluten. Would be nice though. L-Glutamine is a single amino acid, not an enzyme. Open Original Shared Link -

Just wondering if anyone knows of a prepared brand of Ponzu sauce that is gluten-free. I found one (Mitsukan brand) labeled gluten-free, but silly that it lists "wheat" (soy sauce) in the ingredient list, with "Gluten Free" right after. Open Original Shared Link -

I really like quinoa as a substitute for many things, as it actually tastes good, and then it's more nutritious than some of the other "starchy" substitutes. I prefer pasta made from quinoa/corn over other gluten-free pasta, and wonder if there's a gluten-free couscous made of that. Here's a recipe for Tabbouleh, been wanting to try a variation soon.... -
Taking a shot--haven't read anything yet. Just considering starches, proteins, and fats... Most gluten-free flour substitutes are mostly starch, so should be fine at room temp. Proteins may/may not need to be refridgerated. Fats will go rancid much quicker though, so I'd refridgerate/freeze the almond meal. Potato starch & sweet rice/tapioca...

I'm very sensitive to gluten--my 3 yr old (glutenoid) can make me sick for a couple days by touching my toothbrush. I have a breadmaker that I frequently used for years, prior to celiac disease. I also prefer a vinaigrette, or even a bottled Italian dressing. "Ranch Dressing" is a misnomer, as the real flavoring is MSG. I don't serve "MSG Dressing" to my kids. -

Pumpkin is hard to can safely, as it contains little acidity, which aids in controlling bacterial growth. This is why your book has no instructions, but says to freeze cooked pumpkin. Great news. We like cruising and enjoy FOOD, and (pre-celiac) really enjoyed Celebrity. As a new celiac, I was thinking I'd have to give up restaurants, cruises or vacations in general. I'm finding I can still live happy. Thanks for the info!
