I was diagnosed (very unscientifically) with lactose intolerance at birth. I believe my doctor saw symptoms of celiac disease and put the "lactose intolerance and IBS" stamp on me. Yeah I am just worried that it is going to be that much harder to eat... especially since after going gluten free fairly successfully (I'm human - I've made my share of mistakes along the way ), Mexican food was a staple in my house, along with polenta. I know I can handle it but I am so intimidated! Does anyone else have BM problems with corn?

So I have searched this forum for information on corn intolerance. And while I have gotten very good information, I still have questions for some of you who have this. I think I am corn intolerant. I keep a food journal and after I eat food with corn in it, I get bloated, sleepy, and I get stomach pain. I know it is not soy or rice. It still may be milk...

I get a migraine almost immediately after being glutened, but the majority of the symptoms don't start until later. Gut pain, bloating, and brain fog are about 12 hours later, usually. For me it depends on the amount ingested, really. My reactions never seem to be quite the same and that is what made it difficult to diagnose.

I've made a similar casserole with the corn tortillas like juliebove... but I did it this why because I can't make regular enchiladas without the tortilla cracking open! Still tastes good though. Can anyone successfully make enchiladas without split tortillas? I really like the cornbread idea... it would be like that Amy's frozen enchilada pie thing... -

I was told, by a Culver's employee, that their fries are safe. I got really sick after eating those. I also got sick after eating one of their Ande's concrete mixers, so now the only thing I order there is the banana milkshake and haven't gotten sick from that.

I am in the same boat... I have had symptoms since birth. My mom told me the only thing she could feed me when I was a tot was meat and veggies/produce. If she tried something else, I was absolutely unbearable - screaming, crying, etc. Well yeah... I was in pain! And my pediatrician just told her I was "finnicky". One thing I do is write every symptom down that I get during the 5 miserable days - I do this because (1) I like to track stuff like that and (2) I think my sister and my mom have undiagnosed Celiac disease and this info may help them someday (or someone else who is newly diagnosed - who knows?). My fiance is allergic to sulfites (anaphylaxis, asthma attacks, etc.) but the only things that bother him (and by bother I mean send him to the ER) are wines, premade mixed (like margarita mix), frozen potatoes, and grapes. Do sulfites in frozen potatoes and grapes bother you, too? -
I don't drink very often. And when I do, I very rarely get drunk - it takes kind of a lot for me to get drunk and it always has (which is surprising because I am a pretty small girl).
