  1. I'm trying again to lower my food costs. I thought that it might be nice to have a thread where we can share money saving ideas and money saving recipes. What are some of your favorite gluten free meals that take little or no specialty ingredients and are inexpensive?
  2. I'm not really sure whether I'm celiac or not. I had serious complications while going through a gluten challenge in prep for celiac antibody testing and had to quit the gluten and just go gluten free, before I was able to get any tests. Welcome to the boards!
  3. It is so weird to find normal after living the other way for some long. I've struggled with severe anxiety and finally, my brain is relatively calm most of the time.   10. Does your son have bad reactions when he gets glutened? Depending on the severity of his response to gluten, that may be a piece of the puzzle as well. If he gets really sick when he gets glutened, doing a gluten challenge may not be feasible. I'm really sorry that you're having to go through all this on top of all of your son's severe food allergies...

So far, I put the following items in: packets of Planter's Nuts, soy jerky, gluten-free crackers, a few GoPicnic meals, packets of Justin's peanut butter, some paper plates, some plastic forks, a small paring knife, some aluminum foil, 2 flexible cutting boards.   15. No problem! I hope that you can find them. I don't know where you live, but in our area it's really easy to find the soy free earth balance version. I think that even Wal-Mart carries it.

Personally, if I were you I would go ahead and schedule a biopsy if it worked out, but consider that you have celiac and eat gluten free regardless of the biopsy's results.   20. I don't eat Jif or Nutella. Anyway, I went to the health food store in Kalamazoo and they ended up having a nice selection of Justin's nut butter packets. And the per packet price (for the 6 packs) was 58 cents a packet. Not bad at all! I ended up getting 3 boxes with 6 packets per box. That should last awhile. Take it from me, just start out with an across the board rule that people can't bake for you and can't cook for you (except for in unusual circumstances like if you have a friend who really goes out of their way to understand celiac). It's easier than being lax at first and then trying to switch later to being more strict.
  22. I made skillet lasagna for lunch today. Yum! My Meijer's now carries Meijer store brand gluten-free pasta and they have a lasagna cuts variety. It is only $1.99 per 16 oz. (it's non-gmo corn pasta)
