Everything I have read says or implies that a strict gluten-free diet for life is very beneficial. No gluten, return to a healthy small bowel, no more villi damage... better absorption and better health.

My experience with asking Wegman's a question is excellent. Go to their site and enter your question regarding cornstarch and they will reply fairly quickly. Did you check their 31 page list of their brands that are gluten-free? -

I tried two local supermarkets yesterday and didn't find a turkey breast (to roast, not deli) I felt safe buying. One that is listed in my Cecelia's Gluten-Free book has modified food starch and didn't specify what was in it. Any suggestions?
