  1. Casein is milk protein, also known as dairy protein. It often appears in ingredient lists as Sodium Caseinate, but there are other designations. Some celiacs are casein intolerant. Casein has also been identifed as a factor in Autism, and Autistic children often show dramatic improvements after going on a gluten-free/CF diet. Some products which appear...
  2. I am in Markham, Ontario, Canada. Markham's southern border abuts the city of Toronto. More about where I live: Open Original Shared Link I was diagnosed, as shown in my signature, in 2000, but I know from symptoms that I had celiac disease for a long time before that. I had various gastric symptoms for more than 30 years before diagnosis. They got...
  3. In Canada, VH soy sauce is widely available and is gluten-free. Most VH sauces are gluten-free, but there are a few exceptions. VH sauces are sold only in Canada, although the parent company is in the US It's good to know that there is a mainstream soy sauce available in the states that is gluten-free.
  4. So, am I the only male willing to post my own picture? All I see are pictures of women. I know celiac3270 is male, but he is hiding behind a waterfall. I hope he doesn't get too wet I realize that the majority of the participants on this board are female, and that the vast majority are young. I'm 50 and male...
  5. Windows has a program in the accessories folder called "Paint" which can do this. Use it to open the file. Use the Image pull-down and select Stretch/Skew, and enter a value less than 100 for stretch; it will shink the image. Use the same value for both horizontal and vertial, or you will distort the picture. You can also use this tool to crop the image,...

    ARCHIVED Yikes!

celiac3270, what you say is so sad. It sounds cynical at first, but unfortunately it is entirely true. Profits and the pharmaceutical companies really do drive health care, both in the US and here in Canada.
  7. One grandparent each of Scottish, English, Swedish and Norwegian ancestry.
  8. Thanks for sharing. I have looked at your notes and as far as I know they are entirely correct. The stuff about asymptomatic or "silent" celiac disease is especially important for relatives of a person with celiac disease. Something I would add would be that celiacs must ALWAYS read the ingredients on any prepared food. Friends and family need to keep...
  9. IMHO Science Diet is way overpriced. There are better foods available for less. I own a pet supply store, and I sell Science Diet, but as I said, I have better quality for sale at a lower price. Kaiti, check for a PM from me.
  10. I have never run into a butter that wasn't gluten free. If you are avoiding dairy butter is a problem as it has both lactose and casein. But no gluten. Likewise, all of the margarines that I have checked out are also gluten free. No dairy in most of them, but they typically have soy and/or corn. I feel fortunate as I write this that I don't seem to have...

    ARCHIVED Eggs

Before I went gluten-free I used to have problems with eggs, or at least that's what it seemed. If I ate more than about one every three days, I had intestinal distress. Since going gluten-free, I no longer have trouble. But knowing what I do now, I'm not sure it was really the eggs that were the problem--maybe it was just all the gluten I was eating with...
  12. Spelt is really bad. I understand that it has an even higher gluten content than wheat.
  13. Coffee-Mate is gluten free and lactose free. However, it contains sodium caseinate, which is milk protein, so if you are avoiding all forms of dairy it is not safe. I use it all the time.
  14. I was diagnosed at the end of June 2000. During the first three months I occasionally knowingly ingested gluten in small amounts, but each time I paid for it. I have had a few accidents since, but have not knowingly ingested gluten since that last beer I had in early October that year. I know better now.
  15. I "lurked" for about 6 months before finally joining so I could participate in Molly's science fair survey. I think this will be my fifth post since joining in December. I read the board frequently, usually every day, but rarely post . I have been gluten-free for almost five years (and probably celiac for at least ten more), but I seldom see a topic I can...
  16. Wood smoke is gluten free.
  17. Casein is a milk protein, found in dairy products. Even products which have no lactose (milk sugar) frequently contain casein.
  18. It is my understanding that osteoporosis is common in celiacs, due to the malnutrition that is characteristiic of the disease. I have been diagnosed as having osteoporosis, although my bone mineral density is improving with calcium supplements, vitamin supplements and Fosamax. I am a male, age 50, who was diagnosed as celiac four and one-half years ago, after...
