  2. I'm in Canada. The Canadian Celiac Association lists "glucose syrup" as safe for us, saying, "the manufacturing process renders glucose syrups gluten-free regardless of the source of the starch."
  3. Nisey, I posted above the exact regulation regarding the ingredient "maltodextrin" as a single word, and included a link to the FDA website where the source can be verified. In the US, if just says maltodextrin, the only possible sources are corn, potato or rice. Corn is the most common.

  5. While the autoimmune reaction in celiac disease is caused by a group of similar proteins, allergies are usually specific. It is quite possible to be allergic to one of the gluten grains, while having no difficulty with the others (as long as you don't also have celiac disease).

  25. Many suppliers of quinoa deliver it already rinsed. Bob's Red Mill is one of them. We buy theirs. I don't know why you could not rinse the quinoa and let it dry before milling it into flour. The flour will have a distinct flavor in any case.
