ARCHIVED Changing Kitchen Utensils; Is It Necessary?
sa1937 replied to Joe0123's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I taped my flour canister shut and threw it in the garbage. I didn't replace my cookie sheets as they were fairly new and I wasn't much of a baker before. But I have fallen in love with parchment paper. Aluminum foil is also my friend. -
ARCHIVED Changing Kitchen Utensils; Is It Necessary?
sa1937 replied to Joe0123's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I did replace a lot of kitchen stuff like scratched Teflon pots and pans, wooden spoons, cutting boards, toaster (that would be a must), old ancient Tupperware...things I knew I'd never get clean. I kept my Calphalon pots and pans and just scrubbed them real well, as well as casseroles, glass baking dishes, etc. Not everything has to be expensive nor does... -
It will get easier!!! You might want to get some Chex cereals (obviously not Wheat Chex) as there are several that are gluten-free and boxes are well marked.

Welcome! Once you get used to it, you'll find a lot of things to eat and the diet will get much easier. I did have to give up most dairy products right away but found I could use Lactaid milk without a problem. I've just recently started eating more cheese and how I missed it! Check the label on your box of corn flakes. Most of them contain malt...

The What's For Dinner Tonight Chat
sa1937 replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
I'll have to type it out (probably tomorrow). In the meantime, she has 3 gluten-free recipes on her website you might like to check out. http://www.cakemixdo...ts/gluten-free/ I think I'm going to be pretty pleased with her gluten-free cookbook. -
The What's For Dinner Tonight Chat
sa1937 replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
It's a bundt cake from the Cake Mix Doctor Bakes Gluten-Free and calls for a 15-oz box of gluten-free yellow cake mix (I used BC), . Can you have that or does it have soy in it? -
The What's For Dinner Tonight Chat
sa1937 replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
That would work for me!!! At least it would be a lot better than the sandwich I had last night on my inconsistent quality Udi's bread. -
The What's For Dinner Tonight Chat
sa1937 replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Well, I did it! Shrimp scampi, brown rice (had a serving in the freezer) and fresh asparagus. Not bad for a spur-of-the-moment miracle. I really need to do better planning to get out of a boring rut. ETA: And a piece of chocolate chip cake later this evening. -

ARCHIVED Best gluten-free Bread?
sa1937 replied to Kat70R's topic in Gluten-Free Foods, Products, Shopping & Medications
While I have tried a couple of mixes, I don't normally use a mix for bread as I prefer making it from scratch, which is much cheaper. Either way it is more like a thick batter. No kneading necessary. Usually only one rise is necessary before you pop it into the oven. -

Yes, I've read that, too, but I couldn't tell you where. -
ARCHIVED I Had My Colonoscopy Thursday.
sa1937 replied to cahill's topic in Coping with Celiac Disease
Yes, and I whined and worried, too. The prep was nasty but thankfully I wasn't nauseated and I managed to drink every last drop. The procedure itself was easy except I was dehydrated and they had a hard time with the IV. But overall, I was more concerned when I had my endoscopy as I'm not used to invasive procedures. -
ARCHIVED Best gluten-free Bread?
sa1937 replied to Kat70R's topic in Gluten-Free Foods, Products, Shopping & Medications
I've been out working in the yard so my car has been in the garage all day. Since I didn't feel like cooking, I made myself a sandwich with Udi's. Ugh! The last two loaves I've bought haven't been all that good. My sandwich was dry so I don't know what happens to it between the time it leaves their bakery until my health food store gets it in frozen.... -
How long have you been gluten-free? I've just recently started using Bob's Red Mill Gluten-Free Oats and don't have a problem with it. I waited to try it until I was 9 months gluten-free. There's a certain percentage of celiacs that cannot tolerate oats, even the gluten-free kind. I think I've read 10 to 15%. I still only plan to eat it occasionally...

ARCHIVED The Cake Doctor Bakes Gluten Free
sa1937 replied to Dixiebell's topic in Gluten-Free Recipes & Cooking Tips
I finally made a cake from this cookbook yesterday and I'm pretty pleased with it. It's the Chocolate Chip Cake, which I baked in a bundt pan. The next one I'm going to try soon is the Darn Good Chocolate Cake, which is also a bundt cake. Has anyone tried it? -

Not to mention crunchy! But I do carry one in my purse so I'm never without something to eat. -
ARCHIVED Rice Krispie Cereal Allowed Or Not?
sa1937 replied to collgwg's topic in Gluten-Free Foods, Products, Shopping & Medications
It'll get a lot easier after you get used to it, I promise. At present time, Rice Krispies are not gluten-free as they contain malt. But Kellogg's is coming out with a new Rice Krispies in June that will be made from brown rice and will be labeled gluten-free. I'm anxious to try them. In the meantime you might want to look into several Chex cereals... -
ARCHIVED Best gluten-free Bread?
sa1937 replied to Kat70R's topic in Gluten-Free Foods, Products, Shopping & Medications
I bought a KitchenAid stand mixer because I thought it would be more versatile than a bread machine and I don't have room for both. I know there are also others here who love their bread machines. I keep experimenting with bread so yes and no. I'm still searching for that *perfect* recipe but I've made some that are pretty good. And I've baked a... -
Welcome to the forum! I use a lot of products that do not specifically say gluten-free on the package. That said, I do read more labels than I even care to think about. I have a bottle of Food Lion soy sauce that does not say gluten-free on it but it does not contain wheat, which has to be declared here in the U.S. So I trust my instinct if I want to...

ARCHIVED Bob's Red Mill All-Purpose Flour
sa1937 replied to Katrala's topic in Gluten-Free Recipes & Cooking Tips
Yikes! Baby Zombies I think the color probably came from the blackberries ??? A lot of people simply do not like garbanzo bean flours as they do have a very distinctive taste. It also contains fava bean and sorghum flours. Perhaps you could try using a small portion of it along with a more bland gluten-free flour. I did make German pancakes... -
ARCHIVED Nature Valley
sa1937 replied to bridgetm's topic in Gluten-Free Foods, Products, Shopping & Medications
The gluten-free Nature Valley bars are not the granola kind. The only one I've bought is called Almond Crunch (haven't seen the Peanut Crunch yet). They've been available for quite awile and are prominently marked gluten-free on the front of the package. -
ARCHIVED Best gluten-free Bread?
sa1937 replied to Kat70R's topic in Gluten-Free Foods, Products, Shopping & Medications
Have you tried Rudi's? Be careful though as they make regular bread as well as gluten-free. My local health food store told me last week that Rudi's is now outselling Udi's. Personal preference, I guess. BTW, do you have a stand mixer so you could try making your own bread? -
ARCHIVED Has Anyone Here Ever Developed Chronic Dh After Going Gluten Free?
sa1937 replied to George Knighton's topic in Dermatitis Herpetiformis
Guess we're the "plain ham people". I've never bought spiral-cut ham. No Costco aroound here either. -
ARCHIVED Fast/portable/no Cooking
sa1937 replied to Chad Sines's topic in Coping with Celiac Disease
I forgot to ask, are your protein shakes soy-free? If so, you could still have them with a non-dairy milk. With the hard boiled eggs, you could also pick up some ham or other coldcuts (like Hormel or Oscar Mayer) to go with them. They come already packaged so no CC from the deli. Also Nature Valley (General Mills) has Almond Crunch Bars, as well as...
