Sorry I can't help you with the mac and cheese as until just recently I was pretty much avoiding cheese. I think a lot of pie fillings are gluten-free but you need to read the label. Most are probably thickened with cornstarch. If you're using the recipe I'm thinking of (the one that shows cherry pie filling), I have made that one and used apple pie... -

Afraid I'm not much help explaining it...I just know how to do it. Wherever you have your photo, right click on it to bring up the properties and it should tell you how many kb it is. Do you have any graphics editing software on your computer...MS Paint might work? If so you should be able to reduce the size of the photo to make it about 150 pixels wide... -

Well, that's a bummer! Do you have an instant read thermometer? In a couple of cookbooks I have it suggests that the liquid (milk or water) should be around 110°. Do you think the milk was too warm or not warm enough? Many times a recipe also calls for adding sugar (or another sweetener) to the liquid to help feed the yeast. As if I'm any expert ... -

I like Glutino Lemon Wafers...don't buy them very often as I like them way too much! Actually that's the only gluten-free cookie I've tried in spite of the fact that there may be hundreds of varieties out there. -

Thought of a few more things: Rice is cheap as are beans (you can buy a bag, soak them and cook them yourself). Also Mission Corn Tortillas are gluten-free and made on dedicated lines. And who doesn't like Tex-Mex. -

I'd search for all possibilities to be able to have a healthier diet. Even frozen veggies are on sale frequently. Do you clip coupons? Sometimes you can get better buys on name brands than store brands with coupons. There are a bunch of coupon sites, too, where you can print out coupons for various products. My greatest fear was fear itself. I was very nervous about having an invasive procedure. I was put under a light anesthesia (Propofal in my case...might depend on the doctor/hospital). It's not long lasting but I didn't feel a thing....although I was pretty loopy afterward. I did not have a sore throat afterwards. And I got wonderful colored pictures... -

I am so sorry you have been waiting so long...guess with the VA or any other gov't. agency, red tape interferes with getting people the help they need fast. Is there any way you could qualify for food stamps? Or is there a food pantry in your area that would be able to help you out? I do use xanthan gum so haven't tried baking without it unless the recipe is naturally flourless. While it's expensive, it's used in small amounts and lasts a long while. Some people use guar gum instead...don't know how the price of that compares with xanthan gum. I haven't tried any of the Gluten Free Girl's recipes. Can she make bread without xanthan... -

I'm just curious as to why you have to wait to "afford the food". Gluten-free doesn't have to be expensive. It's highly recommended that you start by eating a simple whole foods diet...meats, veggies, fruits, eggs, etc. There are a lot of gluten-free prepared foods out there that are pretty expensive and are probably best avoided anyway when you first... -
Susie, I'd say your Vitamin D is low, which is not at all uncommon. Even people without celiac can have low Vitamin D levels...and if it doesn't quit raining around here, it's not surprising for me (I should have mine retested). I think there is more awareness of Vitamin D now than in the past. Did your Dr. test it and other vitamins? If so, you should...

Vitamins are also a topic that always generates a lot of controversy. Personally I think a lot of this is a CYA statement so the companies are being honest. You might want to check Nature Made or Spring Valley (both are easy to come by) but I don't know anything about their multi-vitamins. -
I can't believe how some families are so unaccommodating. It sounds like a no-win situation. I'd be pissed, too. Unless you really, really want to see everyone, I think I'd be tempted to stay home (just my personal opinion).

Welcome, RangersFan! Personally, I'd try to start making a lot of naturally gluten-free meals (fresh meats, fruits, rice and veggies for example). A lot of the things I ate before my diagnosis are things I still eat today. I think I'd totally freak having a mixed kitchen so everything you can do to minimize your risk will be so well worth it.
