ARCHIVED Is Masa Brosa (Corn Meal) Gluten Free?
sa1937 replied to Bonnie2day's topic in Gluten-Free Foods, Products, Shopping & Medications
I've found that Pyrex or CorningWare is very easy to get clean. Years ago I actually used oven cleaner (like Easy-Off) on some Pyrex. Glass is so much easier to get clean than metal. -
ARCHIVED Best All Purpose Flour Mix?
sa1937 replied to waterlily-'s topic in Gluten-Free Recipes & Cooking Tips
Glad to hear that! I just ordered Jules all-purpose flour but haven't tried it yet. Do you have any of her cookbooks? I also just received latest cookbook, Free For All Cooking (at least I think it's her newest one). -
ARCHIVED Bread Machine Question
sa1937 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Besides the sauce, I used mushrooms, green pepper, onion, sausage and lots of mozzarella cheese. Wish I had thrown on some pepperoni and ripe olives now that I think about it. The extra pizza crust is now in the freezer. My mixer did better with a double crust. Unless I find a recipe I like better, I think I'll put together a bigger batch of the dry... -

:D Tell us what recipe you're using...right now I'm pretty pleased with Annalise Roberts but always open to experimentation. -

The What's For Dinner Tonight Chat
sa1937 replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Pizza!!! I already have enough leftover flour mix from last time so have a head start to make two crusts and freeze one (using a recipe from Gluten-Free Baking Classics). And a salad. -
ARCHIVED Bread Machine Question
sa1937 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Yes, the flours are rather expensive but you don't need to buy 15 or 20 different kinds like I did (a bit OCD, I guess). And they're not usually $6.99 a bag either. Not knowing if you have any intolerances, some can be purchased at an Asian market for about $1.00 or so a lb. If you get ahold of a good gluten-free cookbook, they usually have a... -
ARCHIVED Bread Machine Question
sa1937 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
It's my understanding that you have to use their own mixes...but you might want to see if you can find out more info on that. Also, have you googled "bread machine reviews" (or something to that effect) to see if you can get any more info? I actually considered buying a bread machine early on but decided on a stand mixer instead. That doesn't mean there... -
ARCHIVED Bread Machine Question
sa1937 replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Don't blame you...it's an expensive bread machine and you have to use their own (also expensive) mixes. Have you looked at any other brands? Like the top-rated Zojirushi? -
ARCHIVED Bologna
sa1937 replied to Wenmin's topic in Gluten-Free Foods, Products, Shopping & Medications
Oscar Mayer is a Kraft Foods company and they don't hide ingredients so if it looks ok on the label, it should be safe. -
The What's For Dinner Tonight Chat
sa1937 replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Tonight I'm lazy and pulled out some Mexican Soup from the freezer. I just posted the recipe in the recipe section if anyone is interested in a no-brainer recipe. And a Lemon Lover's Cupcake with Lemon Buttercream Frosting (also pulled from the freezer). -
Mexican Soup This makes a vat...I use an 8 qt. stockpot. Do not drain the cans. Just throw in a can of Mexican corn, (11 oz. Green Giant Mexi-Corn) a jar of Salsa, (I used approx. 12 oz. of Tostito Med. Hot Salsa – it was plenty hot using this amount, which can be adjusted according to your taste) a can of diced tomatoes, (I used 28 oz. can) ...

ARCHIVED Just A Warning Concerning gluten-free Pizza

And so do I! But too late tonight...it's almost 7 p.m. here. Think I'll plan on it for tomorrow night. -
ARCHIVED Just A Warning Concerning gluten-free Pizza
sa1937 replied to Marc49's topic in Gluten-Free Foods, Products, Shopping & Medications
Yes, definitely good. Next time I'm going to double the recipe and stick one in the freezer. I think my mixer will be happier, too, as only 1-1/2 cups of flour isn't quite enough to work with in a 5-qt. bowl. -
ARCHIVED Just A Warning Concerning gluten-free Pizza
sa1937 replied to Marc49's topic in Gluten-Free Foods, Products, Shopping & Medications
I haven't yet seen Udi's around here yet, at least at the stores I shop at. Have you tried the crust from Annalise Roberts' Gluten Free Baking Classics? I think it's pretty good. -
ARCHIVED Just A Warning Concerning gluten-free Pizza
sa1937 replied to Marc49's topic in Gluten-Free Foods, Products, Shopping & Medications
I would totally agree....not only just plain awful but expensive, too. It was the first gluten-free prepared food I bought and pretty much the last. I can do a lot better making my own. -
ARCHIVED High Antibodies After Three Months
sa1937 replied to Nugget's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I swear I just replied to this question. lol I have no idea why my antibody levels are slightly elevated. Nor would I have any clue if I'm getting CC'd or not. Or how long it takes for healing (I've read it could take a couple of years). And I am old. HA! But the bottom line is that I feel great...very few problems. So a lot of progress has been... -

ARCHIVED Best All Purpose Flour Mix?
sa1937 replied to waterlily-'s topic in Gluten-Free Recipes & Cooking Tips
I'm still searching for that perfect all-purpose gluten-free flour. It seems every cookbook author has their own special mix/mixes. Have you tried gluten-free Bisquick for pancakes? I think they taste pretty real to me at least. -
ARCHIVED Favorite Flour Mill
sa1937 replied to etta694's topic in Gluten-Free Recipes & Cooking Tips
I bought a KitchenAid stand mixer after going gluten-free. Never thought of looking at the grain mill attachment although I think it would be overkill for me, at least at this point. Good for me to keep in mind for the future. -
ARCHIVED High Antibodies After Three Months
sa1937 replied to Nugget's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Welcome to the forum! I totally agree with what mushroom said. For what it's worth, I was really bummed that my tTG was 10 in Jan. after being gluten-free for nine months (over 8 is positive on Quest Diagnostics lab test). That was the first follow-up test I had done. My IGG and EMA positive on my celiac panel are now negative. On my original celiac... -
ARCHIVED Favorite Flour Mill
sa1937 replied to etta694's topic in Gluten-Free Recipes & Cooking Tips
I don't have a grain mill per se but I do have an Osterizer blender that does a great job grinding flax seeds or nuts. It's fairly new and wasn't used much at all before I went gluten-free. I also bought a Mr. Coffee grinder, which is a larger capacity with 3 different grind settings. It also does a great job on flax seeds and nuts. It completely comes...
