  1. I'll have horrible lower digestive issues... cramping, BIG D w/in an hour or 2... and will feel very barfy (but I always fight that one!!). The next day I'll be wiped out... foggy and hugging the couch.
  2. Feeling better is the best thing... but allow yourself to grieve a little too. Even 9 years later... sometimes I look at the Chinese buffet restaurant and feel a pang of loss... even while I'm telling myself that I'm SO much better off not being able to eat so many things that are really BAD for me. If you're not feeling 100% w/ all the stuff you've cut...
  3. That's sort of where I was going too. So... Wegman's had all this stuff on a gluten-free display and your husband bought a bunch and your daughter ate it and no one read the labels??
  4. I really don't, but understand the dilemma. Before I cut most of the carbs out of my diet, I happily had a ham and swiss or turkey and swiss sandwich (on Pamela's yummy bread) w/ a big handful of chips every single day for lunch. Every day I'd say to my husband, "That was the best sandwich I've EVER had!" No more sammies... now I eat about 1/2 cup brown...
  5. I've been here for years, and I KNOW that if I EVER have a question about anything celiac related... this is the place for an answer... from peeps who live w/ celiac every day, just like me! I've been helped too... more times than I can count!
  6. I think there's selfishness going on... but it's not yours! Why would your husband choose a restaurant knowing that you'd be able to eat nothing and then call you selfish for not wanting to go and drink only water? I think you're telling him to go w/o guilt and have a great time w/ your daughter is very selfless rather than selfish!!
  7. Have you guys tried baking (like cookies) w/ Bob's certified gluten-free oats? They take so much longer to cook than even the not-instant Quaker oats... I was wondering how they are in cookies, etc?
  8. If you google gluten free puff pastry, there's a recipe on there that I've been wanting to try but haven't... that might work for those flakey elephant ears!

I eat dairy every day... milk in my coffee, salad dressing on the big dinner salad I have for supper often, etc. But the mac and cheese last night was ALL milk and cheese... more dairy in one meal that I normally eat. I planned to try rice milk and make vinegarettes ... and to cut out dairy for several months.
  11. I've been gluten free for about 9 years, w/ few problems. I've completely embraced cooking differently and, while it's sometimes challenging, it's been a positive adventure! Suddenly in the last few months, I've developed a new symptom! When I get up in the morning... I'm talking when my feet HIT the floor, I'm off to the bathroom to completely evacuate...
  12. THANK YOU for the creamed soup base recipes! I just spent an hour looking thru an awesome crockpot cooking list and every other recipe used a Campbells soup! Now, I can consider trying the recipes!!
  13. I'm just jealous that you HAVE a Costco nearby. The ONLY thing around here is Sam's Club (Sam's from AR after all) and the closest one is 2 hours away!! LOVE Costco!!
  14. It takes a while, but you really do get to the place where you can either recreate whatever you want to eat w/ gluten free stuff... or you do w/out. I keep saying ... in the scheme of things and the awful things that can happen to people ... not eating gluten is NOTHING. I just had to learn to cook differently. But, like I said ... it takes a while...

  16. We eat out pretty infrequently, partly because there are few restaurants where we live and partly cause we're cheap... and like to cook. We tend to go to casual places w/ gluten-free menus (Chilis, Outback, and the fanciest, PF Chang once in a blue moon) and literally pat the seat and tell the server to take a load off for a min. I tell them I can't eat gluten...
  17. I was the ONLY one in my family and extended family to be diagnosed about 9-10 years ago. Only one of my kids would consider being tested and the bloodwork was inconclusive.   21. I went to a Salt Creek Grille in Princeton, NJ, last week. The menu had several entrees w/ (g) listed next to it... GLUTEN FREE!! One of the entrees was BBQ ribs w/ garlic fries. I asked the server if the fries were fried in a dedicated fryer... i.e., in a fryer w/ nothing that's breaded. She went to inquire and came back to tell me that calamari was also...

  23. Okay... I'm changing my response. The lobster shell incident is a deal breaker for me. Reminds me of the recent thread about the woman's relative who assured her that the meal she served was gluten-free and after everyone had eaten, she told the celiac that there was wheat in the dish and she'd just proved the celiac was exaggerating and didn't have gluten...
  24. Would she begrudge you spending money on insulin if you were a diabetic? Or paying the cost of a really expensive prescription if your doctor said it would save your life? You're buying FOOD that happens to be the ONLY treatment for the condition you have! It doesn't matter WHAT it costs if it keeps you healthy and happy! I think the best advice you've...
  25. Sounds like you need a vacation more than patience! I guess it'd be silly to ask if you can keep him sitting up and not lying down for a few hours after eating? That's my first thought. I've been having a lot of reflux/heartburn lately and had to start eating supper (and less of it!) earlier so I can have a few hours to digest before I lie down to sleep.
