  1. Oh NO! Connie, I could be wrong, but I don't think Kellogg's Rice Krispy Treats are gluten free. Don't they have malt in them? Sorry to be the bearer of bad news. The good new is there are really good cake mixes out there. Look for Pamela's brand cake mixes in stores--so easy and so good! And actually Betty Crocker has some gluten-free cake mixes...
  2. You should definitely get an allergy test for wheat. You might also consider testing for mold allergies. Some molds are very toxic, but not everyone reacts the same. If you have mold in your house it can make you very sick to the point of having neuro problems like some of the things you have shared on this board.
  3. Hi, I don't know a lot about the tests, but I know Enterolab DOES NOT diagnose Celiac. They will only tell you if you are gluten sensitive. You should do all the testing you want done while you are still consuming gluten. Once you go on the diet the results of any tests will be inconclusive (most likely false negative). So if you want to find out if you...
  4. Oooh, I think you may have hit on something here. I have always had very low BP. Sometimes it was too low to donate blood. One time the nurse told to go eat something salty and come back in 30 minutes. I don't get light-head though, just the pounding heart in my ears and difficulty breathing. I have been drinking tons of water to stay hydrated, but I...
  5. OMG, I have no idea what I would do if my family was that bad (well I haven't visited the in-laws yet so we shall see). I think I would just withdraw and refuse to eat with them. Is this just for a weekend? As much as I don't like to eat a lot of packaged foods I think I would pack a little box with non-perishable food that is sealed and doesn't require...
  6. Okay, what temperature do you keep the AC? We keep it between 76-77 right now and it's just barely tolerable to me heat-wise if I'm doing housework. Today it's set to 76, but not keeping up (which means they didn't really fix it yesterday ) so the actual temperature in here is 78. I don't think I could stand to go much warmer.
  7. Oh, that's so sweet of your Hubby. Mine jokes that I'm his little space heater or electric blanket.
  8. So I recently picked up some rice paper wrappers as well as some rice and tapioca paper wrappers. I was so excited to see how easy this stuff is to work with. So far I have just been filling it with stir-fried meat and veggies and bean thread noodles. But I have been brainstorming other possibilities. Has anyone used these to make something like ravioli...
  9. You can certainly try if you think meat is bothering you, however have you tried eliminating dairy or soy first? The reason I ask is because you said you still have bloating, D, etc. This could very well be from dairy or soy. Oh and another thing to mention is MSG-- if you are eating Bob Evans sausage it might be gluten free but does it contain MSG?...
  10. I don't really have a recipe, but I'll tell you basically how I make the filling: Ingredients: several zucchini (2-4 depending on how big they are) Cooked rice, cooled 1 lb raw ground meat (lean meats like chicken, turkey, or bison work well, but beef will be fine) tomatoes sauce (here is where I change it up a little, sometimes I use jarred spaghetti...
  11. Don't let it hurt you too much. I find that people who don't eat gluten free really have no clue about how much stuff they eat that has gluten (even if you have explained it before). She was probably thinking fried cheese sticks don't have gluten until she saw your face. I once was at a friend house around lunch time as I was getting ready to leave and...
  12. Thank You! It's good to know I'm not alone. Oh I get what I call the "gluten fever" too. When I've been glutened I get alternating fever and chills--this is regardless of the weather.
  13. Oh gosh, I don't know what I would eat if fruit and veggies bothered me. I have bananas and apples most often for snacks because they are cheap most of the year. I'll either eat them with some peanut butter or drizzle with a little honey if I want something sweet. I eat eggs multiple ways--hard boiled, scrambled, poached--but most often hard boiled because...
  14. I live in Virginia (near the ocean) but I grew up in the midwest, so it's very possible I am just not used to the heat and humiditiy. I don't work out as much as I should, but I am building my strength back up after three years of being very, very sick (to the point of being bedridden for a few months). I live close enough to a stores that I can walk and...
  15. For the future ask that your burger be grilled on some foil. Grills are gluten death traps because if they have ever used any sauce on the grill with gluten in it (or grilled meat marinated with gluten) the grates will have gluten and CC your burger. Also consider the tongs used to turn the meat and ask yours to be flipped with separate tongs OR place foil...
  16. If you have had the salad before without a problem I would suspect CC or the burger. How was the burger cooked and were any seasonings or sauces (like soy sauce, Worcestershire sauce, etc) added? I hope you feel better soon! Getting glutened is no fun. ETA: I would not trust any gluten-free pasta cooked at someone elses' house that makes regular pasta...
  17. Okay, so yesterday we had triple digit temperatures here. It just so happened that our AC decided to quit working. It was 95 degrees in my home and I was barely able to move. My heart felt like it was pounding in my ears and I was very near to passing out, despite taking several cold showers and drinking lots of ice water. It was also very difficult to...
  18. Connie, others have given you great advice here that I agree with very much, so I won't repeat what they said. I will just say that yes, research is showing more and more each day that gluten leads to neurological problems (anxiety can be caused by neurological problems). I don't have an article on anxiety and gluten, but I was just reading one the other...
  19. I actually find it helps me to fast for at least half a day to one whole day. Not a true fast, just a food fast--I drink plenty of water, herbal tea and some carbonated beverages. Then I add something bland and comforting--Baked potatoes or chicken broth with rice noodles seem to be what I do most often because both take very little effort to prepare when...
  20. Do you have an Asian food store around there? Get some rice paper wrappers. I recently have gotten hooked on stir-frying veggies, (pretty much any combination that sounds good) and wrapping them up in those rice paper wrappers. I use garlic infused olive oil or sesame oil, but if you can have soy use some gluten-free soy sauce or teriyaki sauce. These...
  21. This is SO my problem too. I just can't seem to get motivated. It has gotten much better since I got off the gluten. Now I at least have the energy to clean most days, I just don't WANT to do it. I'll be watching this thread to see how your progress goes Stef. I tried flylady a few years ago and it didn't work for me. I would spend more time reading...
  22. I wouldn't dream of it, since I'm not about to share my own weight.
  23. Wow it is so interesting to read about different allowance amounts. When I was in middle school in the 80's I got $20 per week. HOWEVER, I had to pay for school lunches and most of my own clothes out of that amount. It taught me about saving up for what I wanted that's for sure. My mom did make me return a pair of designer jeans I bought one time that...
  24. Thanks for your answer Patti. I was trying to add a poll so it would be anonymous, but it doesn't seem to come up when I post. I guess if anyone wants to just answer in the reply's that's great.
  25. Trying this again. The poll didn't seem to show up the first time. Just curious how tall you are. Thanks.
