  1. Yikes. Thanks for pointing that out. I'm addicted to making my own yogurt in my crockpot. If you like to drink your yogurt then you will really like homemade yogurt as it tends to be thinner then store brands.
  2. So sorry to hear about your bad night. Going to the ER and then waiting for meds is no fun even without the hassle of having to check if your meds are gluten-free. Unfortunately this could be a problem at any pharmacy. They don't teach pharmacists about celiac disease or gluten intolerance. My SIL is a pharm tech and when my H told her I can't have...
  3. What did your doctor say about the high iron levels? Were they "high" as in above normal levels or just "high" as in not indicative of anemia. High iron indicates a problem with Liver function. I would not be surprised at all if this is your body telling you to lay off the meat for a while. I have always had the opposite problem of not having enough iron...
  4. I felt terrible for about the first two weeks. Some people call it detox or withdrawl symptoms. Think of gluten as a very dangerous drug your body got used to you ingesting. It takes a while to feel 100% better. One other thing, however, if you keep feeling tired after a couple months gluten free you might have to eliminate other foods to help your body...
  5. Sounds like celiac or gluten intolerance to me. Of course I might be biased since I diagnosed myself. If I were you, first thing I would do is get a copy of the blood test results and find out which tests they did and exactly what the numbers were. You can post them here if you need help interpreting them. They have to give you your records by law, so...
  6. Yep. Unexplained fevers/chills were one of my symptoms. At one point it was so bad I thought I was going through early menopause (I'm 30). I hope you can get your testing done without causing too much damage to your body with this trial. Just curious--What is your reason for needing the additional testing? I can't bare the thought of going through that...
  7. I have never used that brand, but I do pretty much the same thing with crushed up gluten free corn flakes. Try adding about 1/4 teaspoon of black pepper and a little paprika to the ingredients you are using. Also did you did it in egg? If you can have egg, dip the chicken in egg first, then roll in breadcrumb mixture. I also bake mine instead of frying...
  8. Thanks for the links and ideas! I wish I could find teff flour around here. The main flours I have to work with are buckwheat, potato flour, tapioca flour, arrowroot and cornstarch. I have also seen flax seed but haven't bought any yet. I haven't found many recipes using these flours together, but I have been playing with them as substitutions anyway...
  9. Modified food starch and Natural and Artificial flavors are the most iffy ingredients in that list (at least as far as gluten goes--I don't willing consume anything containing HFCS and Partially Hydrogenated Veg Oil). Even though in NA the Modified Food Starch is usually not gluten, it COULD BE. I would contact the company to make sure if I were you.
  10. I can't say I had difficulty going gluten free once I figured out that it was my problem, but my process of getting to that conclusion was a lot different than you. My doctors were not willing to consider celiac. After being tested for many, many other things (all negative) and being so sick I was practically bed-ridden I decided to try an elimination diet...
  11. Thanks, I covered the mixing bow with plastic wrap and I'll keep it in the fridge for a day or two to see if I could come up with something else. No, the recipe doesn't give a temperature at all. I should have known that those simple ingredients wouldn't make a dough. I used to make pie crusts and pasties and things from scratch all the time pre-gluten...
  12. So I picked up this book at the library: the Autism Cookbook: 101 Gluten Free and Dairy free recipes by Susan K. Delaine. I was really excited looking through the book as she had some great meal ideas and she also uses flours I have been able to get fairly easily like buckwheat flour. I also noticed the baked goods didn't have xanthan gum or guar gum--things...
  13. I get fatigue and headaches whenever I ingest something with soy. Soy is in a lot of processed foods and a lot of gluten free products as well. If you can't find anything with the testing, you might want to try an elimination diet to get to the bottom of it.
  14. Oops, I thought you said you homeschooled in your first post I think the same baby equipment *might* be a culprit since many of those things have fabric, it makes sense that it would be hard to get all the little crumbs and wheat dust out of it. I mean, think about your car seat for example. If your previous kids were given a snack in the car (or even...
  15. Was the pan you used to simmer the beef in one you have been cooking with without problems? If not, could it be cc from the pan? I use peppercorns all the time in my cooking and don't have a problem, but it's possible you are sensitive to them or to the beef. Another thought--how are your peppercorns stored? If you have had them for a while and used them...
  16. Is she in the nursery at church or does she stay with you the whole time? I used to work in a church nursery and all the snacks were gluten-traps-- cheerios, goldfish, animal crackers, etc, in fact I can't think of a thing we had that was gluten free. Another thought--are you using the same highchair, carrier, cribs, etc you used with your older children...
  17. I think kareng hit the nail on the head. If you look at the date when a post was made you will not be confused or lead astray by outdated info. If anyone were just randomly searching for info on anything on the internet and came across an article dated 1996, hopefully they would continue searching to see if the info had changed since then. This board has...
  18. I can't think of any advantage to getting a biospy with multiple positive blood tests. Maybe the experts here will chime in a reason why, though. As far as the anxiety attacks, I'm not completely sure, but I might have been having anxiety attacks. They may have been asthma attacks or anxiety attacks. Sometimes I would go into a public place like a...
  19. When I was a child I refused to wear socks. I would go out in the middle of winter and run in the snow barefoot. My mom always yelled at me that I would get frostbite on my feet and make me come back in and put socks and boots on. Sometimes I would walk part way to school and take off my socks when I was out of sight of my mom. My feet were ALWAYS hot...
  20. I'm sorry for your loss You know, there's nothing wrong with being sad because of your fiance, but the fact that the test results are negative also doesn't mean there's not a physical cause for some of your symptoms. Your doctor cares about you very much and that is not an easy thing to find, but he sounds like an old country doctor that may not really...
  21. If the biopsy showed celiac then he HAS celiac! Everything I have ever read says the biospy trumps the blood test--the blood test is frequently false negative, especially in young children. False positives test results are extremely rare (if even possible). Your doctor is an idiot for not diagnosing him and telling you to wait 6 months. If you need an...
  22. I don't know about that brand of lotion, but I use Aveeno lotion with oatmeal and I do not have a reaction. However I also do not react when I eat certified gluten free oats either. I have a very bad reaction to lotions with wheat germ oil, but no reaction to oats. Some people have a reaction to oatmeal even if it is certified gluten free. So I'm thinking...
  23. I tend to avoid restaurants without gluten free menus. I'm not familiar with their menu, but you may be able to get a salad with no croutons, no cheese and no dressing and be okay. Just be sure to ask that they mix your salad in a clean bowl so there is no cc. A plain baked potato may be another safe option that most restaurants can do. Avoid fries unless...
  24. Welcome to the board! Many people that had neuro symptoms before going gluten free have the gastro symptoms also after going gluten free and getting glutened. You just gave your body its first test and saw the results of how bad gluten can hurt you. Fortunately, you figured it now so you will start to want to avoid it at all costs. I knew gluten was my...
  25. I consider all of those things "processed". Any food that has been changed from it's natural state when harvested/slaughtered or had chemicals/preservatives added is processed. Some foods are more processed than others, IMO. The more ingredients (especially ingredients that you could not go out and pick/buy/grow yourself to duplicate the product in your...
