If you have a crock pot there are some really good/easy recipes on this blog: Open Original Shared Link Of course you have to plan ahead what you are going to eat so it's not really "fast", but most crock pot recipes are one pot, don't use the oven and take very little prep time. -

BTW, there's absolutely no harm in avoiding gluten. You won't be hurting yourself or you children at all if they avoid gluten for the rest of their lives. It won't prevent them from being diagnosed with something else if they have another disease. I don't understand why your GI doctor would say don't do it, unless he is wanting your son to keep getting... -

Congratulations on finding the answer. Yes, many people have negative test results but a positive reaction to the diet. The rate of false negative is high, especially in very young children. No, you always need to ask. Besides the possibility of wheat in the broth, there's the possibility of wheat in the seasonings they add. Also, while risotto is typically rice I have seen dishes called "risotto" that were made with barley or orzo pasta or some combination of those with rice. Never assume anything is gluten free.

Have you also cut out dairy? At first you may be lactose intolerant due to the villi damage. Once your body heals though you can try adding it back in. I've been gluten free for almost 7 months now and I can just tolerate yogurt and some low-lactose cheeses, but non it large quantities or else I get cramping and D. If you have time before you leave go to a Walmart in your local town and pick up a state road atlas. It will have a list in the back of all the Walmarts in the US. Otherwise, most big towns have a Super Walmart or Target and where ever you end up you can just ask the hotel staff for directions to the nearest one. Not all McDonalds have the internet and... -

The "catch" is usually in the star rating. It may not be the cleanest or it might be located in an undesirable area. Also, probably not very comfortable, but if you are used to traveling Europe and staying in hostels it may be fine for your needs. It also may not have any amenities like free breakfast or cable TV or internet access. -

I don't have any suggestions on places to stay, but when you cross the border into TN be sure to stop at the state "Welcome Center". You can get travel booklet with hotel discounts and also plenty of pamplets on things to see and do in the state. Every state border should have a a welcome center like this, assuming you are traveling the main interstates... -

I was wondering the same thing. Didn't new labeling laws go into effect recently? I had some tuna pouches I thought were safe and now all of the sudden the same ones in the store say they have soy. I take my own dressings all the time. I'm sure you could take your own soy sauce in to a sushi place. It's harder to be spontaneous while gluten free. Unless you are okay with leaving and going someplace else if they can't accommodate you or sitting and watching your friends eat while you have nothing. I LOVE Dr Pepper. It's one of the few sodas I indulge in. Since I tried the Heritage Dr. Pepper (Real Sugar instead of HFCS), though it's not the same drinking the regular stuff. It could be the mushrooms. I developed a bad allergy to mushrooms after going gluten free. If I eat one and my tongue swells up, and my skin itches for days. Sorry I just noticed this question. An elimination diet is where you eat only a few whole foods that you are pretty sure are not bothering you. Then you add new foods in one at a time to see how you react. Awe, that is SO sweet that your hubby is understanding. I would have eaten the one he flipped with his fingers, but that's great you were able to resist. For the future, have them wrap the steak completely in foil and that way he can flip it without changing tongs. It may take a little longer to cook, but it will still cook just fine. I avoid the little hole-in-the-wall places mostly. I have found a few local places while traveling that actually have gluten free menus. I totally agree about the soy replacement foods. I was vegetarian for 5 years and all the soy burgers and tofu did not make me healthier during that time. I was always very low energy with more aches and pains due to the soy. -

I guess I see it a different way. I plan for my future kids to BE gluten free as long as they are at home. That's whether they have it or not. When they grow up and get out on their own they can experiment with gluten and find out if they are able to eat it. Thank You ravenwoodglass. I probably could find a doctor to diagnose me now. I found one listed as the local Celiac group consultant that would probably do the testing. But, to me, it's not worth the pain and health risk of going back to eating gluten. I'm seriously considering getting the genetic test even though I know it's not diagnostic. The problem... -
