  1. The only time I have eaten Wendy's chili since going gluten free I got sick from it. I thought it was the beans, since I still can't tolerate them. But I also checked the ingredients and found soy listed--so perhaps it was the soybean oil that made me ill. Either way I am avoiding Wendy's. I also got sick from a salad without any croutons or anything...
  2. As someone else mentioned above, they can't see the damage done by celiac with the endoscopy. They are just guessing at where to take tissue samples. They may have taken tissue samples of the healthy part of you intestines. OR since you had been of gluten for a month the damage may have healed. There may have not been very much damage to your intestines...
  3. Hi Connie, did you decide to get more testing done? You know even if all your celiac tests come back negative, it's okay to just decide to not eat gluten. Plenty of people here were never officially diagnosed, but they know that gluten makes them sick. Listen to what your body is trying to tell you!

  5. Thanks every one for the suggestions. I forgot about this thread temporarily. I ended up rolling the dough out really thin on parchment paper and making buckwheat crackers out of it. I brushed them with garlic-infused olive oil and sprinkled with sesame seeds, then cut with a pizza cutter. They came out okay, but didn't get completely crispy on the inside...

  8. I've just about given up on fast food fries being safe. I've gotten sick from Chick-fil-a and McDonalds.
