I would try the diet for at least a month and see how you feel then. There is a high rate of false negatives with the blood test. Also, I have read if the endoscopy did not take samples from the right place you could get a negative that way too. Did they do a biopsy at all or did they just inspect the tissue? GERD is diagnosed by just looking at the stomach... -

Most of the gluten free cookbooks I've looked at are geared towards baked goods and the recipes seem really complicated with multiple flours. As pp said, Malt is a source of gluten. Speaking of malt, another thing you should check for malt is cereals. Many of the ones you would think are gluten free naturally like Rice Krispies or Corn Flakes have malt added so they are not gluten free. -

Yes, the blood tests are not very accurate and often false negatives. There are a few other tests you can request. One is a biospy of the small intestine to check for damage, but I'm not sure if they do that with small children of not. Have you taken him to a dermatologist for the "exzema"? If not, see if you can get him in and get skin biopsy of it tested... -

I can not eat most deviled eggs because of the mayo. Most mayo is made with soybean oil. Anything with soy (even the oil) gives me a headache as soon as I eat it. I've heard you can make your own mayo with light olive oil but I have yet to try it. -

As a PP said false negative test results are common. There are many people here that had negative test results, but had huge differences in health when going gluten free.
