ARCHIVED Should I Give Up My Job?
GlutenFreeManna replied to Streetlegal's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
How long have you been a professor? I don't know how your school works, but I taught intro-level classes at a university during a time in my life when I was very ill and I did not have a diagnosis yet. I can understand what you are saying about some of the students only caring about their grades. When I finished teaching that semester I knew I had done... -
ARCHIVED Glutened Questions...
GlutenFreeManna replied to Philippa's topic in Coping with Celiac Disease
You could have a stomach bug or you could be getting glutened in some new way. I had one time when I knew I had a 24 hour stomach bug because my husband had it first. He brought it home from his work place where almost everyone was sick with it. Without thinking I took some OTC meds to try to counter-act the symptoms of the bug. A week later I was still... -
I know this is so hard to take, but it's best if you start to look at bread and pasta as a treat you have every once in a while instead of a staple of your diet. There are gluten free breads and pastas out there that are good, but they will not be what you are used to. They are also expensive, much more expensive than regular gluten food. Finally gluten...

ARCHIVED Did You Have A Trigger That Started Your Symptoms?
GlutenFreeManna replied to afreeclimber74's topic in Coping with Celiac Disease
I'm not sure what was the trigger. I was healthy and symptom free up until my mid 20's. While in grad school I started having stomach issues of and on. It was diagnosed as gallstones. I was told to alter my diet--cut back on fatty foods and avoid anything with high acidity (tomatoes, onions, peppers) which could bother me. Ironically most of the veggies... -
ARCHIVED Any Sleepwalkers Out There?
GlutenFreeManna replied to buffettbride's topic in Related Issues & Disorders
I don't know if this has to do with gluten, but I did sleep walk as a child. One time my parents found me sitting on the side of the bathtub with the water running. They woke me up in the process of trying to figure out what I was doing taking a bath (with my pajamas still on) in the middle of the night. There are certain ages when sleepwalking is more... -
ARCHIVED Stress Dreams About Eating Gluten Foods
GlutenFreeManna replied to GFLindsey's topic in Related Issues & Disorders
I know this thread is a little old, but I just had to reply. I have had those dreams too. Usually I dream I'm at a party talking to people by the table with food on it and I absent-mindedly pick up a few pretzels or something and eat it them. Then I start to panic because I have to find a way to go to the bathroom and spit it out without being obvious... -
I lost 20 lbs in the first 2 months without even trying to. I didn't replace my breads and pasta at first I just eliminated them and ate what I could--veggies, lean meats and some fruit. Once I started trying new flours for baking and a few replacements here and there I did notice my weight loss stopped, but I have not gained any of the weight back. Probably...

I don't know the answer because I'm not familiar with the brand, but I'm wondering if they are just chicken breasts, what could be in them that could contain gluten? I haven't been doing this long and most of the time I buy my chicken fresh, but I'd like to know for future reference what to look out for. Thanks and I hope you get you answer. Sometimes...

ARCHIVED Since Going Gluten Free....
GlutenFreeManna replied to pues's topic in Coping with Celiac Disease
Wow, great idea for a positive thread! Since going gluten free.... I went from looking like I was pregnant to having a waistline again, the bloat is gone and I need to buy new (smaller) pants! I went from being almost bedridden with joint pain and fatigue to being able to do household chores again (who knew being able to do the laundry and the... -
ARCHIVED Im Not Crazy
GlutenFreeManna replied to ragidyann's topic in Parents, Friends and Loved Ones of Celiacs
Oh I totally understand! I used to think I was going crazy too. I broke down crying in a doctors office one time out of frustration and he suggested I get psychological help! Isn't it a great feeling though to be able to take your life back? It can only get better now that you know what's wrong. -
ARCHIVED Suspicious Cookware?
GlutenFreeManna replied to MaHartley's topic in Parents, Friends and Loved Ones of Celiacs
Hi, I don't know any "treatments" to make the cookware safe, but I have read here that cast iron is the worst offender in cc. The next worst would be non-stick treated pots and pans--the gluten can get in any scratches. I think that stainless steel would be safest because you can scour it really good with a scrubber, however, I played it safe and got rid... -
Welcome! I'm new to the boards myself. If you are in the first few weeks your body might be undergoing some sort of detox. That was my observation anyway. I eat much healthier than I did before going gluten free. Very little in the way of processed foods. The first week or two I alternated between feeling better and feeling worse, then I got to a point...

ARCHIVED Testing After Being gluten-free For Six Months
GlutenFreeManna replied to Lgood22573's topic in Coping with Celiac Disease
I would have told him that eating gluten was a MUCH LESS PLEASANT lifestyle than avoiding it! Why put yourself through that pain, discomfort and health risk of eating gluten if it's not necessary. He sounds like the type that would have just diagnosed you with IBS and given you a prescription had you come in not knowing anything about celiac disease. I... -
ARCHIVED Gluten Free/allergy Free Recipe Site With A Search Engine
GlutenFreeManna replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
thank you char, that is very helpful. I have seen some of those websites before and some are new. I have to spend some time exploring them. I guess it was too much to hope that there was one site with everything I'm looking for. I guess I'll just keep searching and browsing gluten-free blogs. I love to cook, but since cutting out gluten, soy and dairy... -
ARCHIVED No Gluten/no Meat Help..
GlutenFreeManna replied to HopeMum's topic in Gluten-Free Recipes & Cooking Tips
Do you eat eggs? Black bean burgers are easy to make and tasty but all the recipes I have seen have eggs and flour. The flour is easy to replace with any gluten free flour or gluten free oatmeal. The main ingredients are beans, egg, about a TBL flour, and any shredded veggies you like-- carrots and onions are good. Add a little salt and pepper to taste... -
ARCHIVED Gluten Free/allergy Free Recipe Site With A Search Engine
GlutenFreeManna posted a topic in Gluten-Free Recipes & Cooking Tips
I was wondering if anyone knows of a recipe database type site where you can eliminate common allergens (gluten/wheat, soy, dairy, etc) when searching? I use some of the mainstream ones (allrecipes, recipezaar, etc) but many of them do not allow more than three or four exclusions and usually the recipes that come up still have ingredients that contain an... -
ARCHIVED Does Anyone Have Bad Reactions To Quinoa?
GlutenFreeManna replied to GlutenFreeManna's topic in Gluten-Free Foods, Products, Shopping & Medications
Thank you Mari and RunnerMom for your replies. Yes, this reaction was worse than any glutening I have had. RunnerMom I will not be quick to try Amaranth, if that is the case. I have not tried chia flour yet, but I will remember it for later. I think I'm going to stick to mostly steamed veggies and safe meats for now. I guess I need to let my stomach... -
ARCHIVED Whole Semolina Durum
GlutenFreeManna replied to mareahf's topic in Gluten-Free Foods, Products, Shopping & Medications
Hi, I'm wondering, was this a sourdough bread? I have read that some processes of making sourdough break down the gluten, making it potentially easier to digest. Perhaps you have healed enough that the weakened form of gluten did not give you symptoms. I would still not risk eating it again (like PP mentioned it could still do damage over time) but perhaps... -
ARCHIVED Does Anyone Have Bad Reactions To Quinoa?
GlutenFreeManna replied to GlutenFreeManna's topic in Gluten-Free Foods, Products, Shopping & Medications
That's a good thought, I didn't know they made wheat pasta as well, but I am 100% sure it was their "gluten free" box. I know because I avoid soy as well and I always check the ingredients--many gluten free items have soy. The box had exactly two ingredients: ORGANIC QUINOA, ORGANIC CORN. Now that I know they make wheat pasta, however, you got me wondering... -
ARCHIVED The Rest Of The Household...
GlutenFreeManna replied to NorthernElf's topic in Coping with Celiac Disease
I mentioned in another post that my husband does not eat gluten meals at home. I cook one meal for both of us to enjoy and my kitchen is gluten free. This is by his choice and not mine. He has insisted from the beginning that if I can't eat something, he should not be able to eat it either. I had to encourage him that I don't mind if he orders off the... -
ARCHIVED Just Feeling The Need To Vent...and A Couple Questions!
GlutenFreeManna replied to tmf315's topic in Coping with Celiac Disease
I avoid dairy as well, but yogurt is one of the few dairy products that does not bother me. However, before I figured that out I was eating coconut milk yogurt. I don't know if we are allowed to give company names on here but there is a certain brand that makes coconut milk yogurt and ice cream. It's almost better tasting than the regular stuff, IMO. ... -
ARCHIVED Does Anyone Have Bad Reactions To Quinoa?
GlutenFreeManna replied to GlutenFreeManna's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks. At least I'm not the only one. I feel bad about not being able to enjoy it, because a friend of mine (who is not gluten-free, just a health nut) kept telling me about how great it is and all the health benefits. I don't have any desire to try it again now for a long, long time. -
ARCHIVED Just Feeling The Need To Vent...and A Couple Questions!
GlutenFreeManna replied to tmf315's topic in Coping with Celiac Disease
Yes, I have the problem of getting "the shakes" when I don't eat for too many hours. I have gone to eating something small every few hours and I have smaller meals, sometimes I will only eat one actual "meal" per day and the rest of the time I just snack. I find that when I avoid foods with sugar (carbs) and eat mostly proteins and veggies I get fuller... -
ARCHIVED Following gluten-free And Sick (One Year Later)
GlutenFreeManna replied to Kathleen Smith's topic in Coping with Celiac Disease
Hi, I'm somewhat new at this, but I was wondering if you have eliminated soy from your diet as well? I find that I get nausea when I eat products with soy in them. Many, many processed items have soy. Perhaps soy or something else beside gluten is causing your nausea. I did an elimination-type diet to figure out what else I needed to avoid besides gluten...
