  1. Always from scratch - I do not use any mixes (though I've tried some to give them a shot but ICK!). I make my breads, cookies, cupcakes, breads, desserts and so on all scratch. My flour count is now up to 18 kinds. I have one mix in the house and that is for pancakes which isn't bad. I love to bake so why not continue?? Not letting gluten-free...
  2. You can buy gluten-free ladyfingers and easily make tiramisu, thankfully! I also have a recipe for homemade ladyfingers if you'd like. Then you can have your favourite dessert again!   4. Baking onion rings is very easy, it's true! Just be sure to season the flour very well prior to baking because some recipes exclude seasoning. You don't want bland rings! Some good seasonings include Smoked Paprika, Cayenne, Herbes de Provence and so on. Plus I love to sprinkle mine as soon as they are out of the oven with crunchy coarse sea salt...

  6. I had both a colonoscopy and gastroscopy and am glad I did. I was told that the gastroscopy was to check for celiac (biopsies) and the colonoscopy was to rule out any other potential problems. Several biopsies were taken from each. If I were you I'd really push for that. Were you told you need to eat gluten (and lots of it) for at least two months...

  8. I'm wondering the same thing as I've been gluten-free for six weeks. I know I was accidentally glutened twice (was informed by a company that their gluten-free product was no longer gluten-free after I ingested it) but nothing happened. No symptoms at all. It's nerve wracking as I cannot tell whether I have been glutened besides those two times.
  9. It is good. As noted above, the texture is not like real focaccia but mine rose nice and high and had a fine crumb. What I liked best was the smells exuding from the kitchen - fresh rosemary is wonderful - and the flavours are like focaccia.

  12. Have you tried making aioli? Quick and easy and vastly superb to bought mayonnaise. Interested in roasted red pepper/walnut dip? How about hummus? Or sundried tomato pesto? You can add a touch of mayo to those things, too, to dip or spread on proteins. If interested let me know. I teach classes on this type of thing.

  24. The word "disease" bothers me, too, so I say "I have celiac" and then explain a little more if necessary. I do have celiac disease and it took awhile before I could say it without cringing. Like Lisa I do not allow it to define me because there is so much more to me than that. As I am asymptomatic, I have to keep reminding myself I truly do have it...
  25. I used to work for Organic Crop Improvement Association, a certifying body (international). I was appalled to see how much GM stuff was seeded (was living in Sask - I've lived in Sask all my life until a few years ago when moved to Alberta). It was very, very interesting. I'm a Master Gardener, too, so am concerned from that perspective as well.
