  1. This morning I made some amazing Italian breadsticks that remained soft on the interior with a lovely brown crisp crust. They were excellent for dipping in good olive oil and balsamic vinegar, of course. With them I softly scrambled eggs together with chunks of slightly spicy pork sausage and a sprinkling of fleur de sel.
  2. I make something similar. There is no reason why this recipe would not work - the ingredients play well together! And the ratios are right, too. Let us know how you like it.

  7. It became obvious that dairy was bothering me a few months after cutting out gluten. Within about 15 minutes after ingesting dairy, my stomach began to cramp and I became very bloated. Then the diarrhea began. I went off lactose for a few months which helped and re-introduced it. At first it was fine for several months but the last three months or so...

  10. After my celiac diagnosis 1.5 years ago, I went gluten free. I was accidentally glutened once soon after and not again until a few weeks ago. Both times I had absolutely no reaction! Sometimes a little part of me wonders whether I truly do have celiac...but in my mind I know that I do. Weird.
  11. Croutons. I find bagel chunks to be better for rustic croutons than thin sliced bread. Great in panzanella salad, too, as they absorb flavours/juices of the other ingredients such as tomatoes.
  12. My chronic pain doctor put me on a high dose of Magnesium Glucinate (1200 mg daily). It really helps with my RLS (and I have tried many things). Be careful if you start taking Magnesium as it can cause diarrhea until you are used to it.

  15. Symptoms for gluten intolerance and celiac can be very similar. If the surgeon missed something with taking few biopsies I am unsure what to tell you. Sorry! It does happen, though.   16. Five is a small number, unfortunately. It is recommended that one has at least 8-12 biopsies taken otherwise it can be so very hit and miss.

  24. Sauterne wine and cooking wine are both dreadful in cooking. I did an experiment with both and the outcomes were very grim indeed. The only wine one should use is a wine you can easily drink - not the most expensive by any stretch. Any $10 would do. When cooking with wine, you want it to enhance the flavour of what you are cooking - not mask or ruin it...
  25. Kinnikinnick "panko" crumbs are a far cry from authentic panko crumbs which are more like large jagged shards. No matter - they certainly do have their place. It just sort of bugs me that they call them "panko". You can also use cornbread cubes.
