  1. Wild blueberry and peach smoothie with lime and flax seed.
  2. Having trouble with my thumb that I sliced a chunk from so we are having: - leftover meat loaf with red wine glaze - baked potatoes with lemon chive butter - minted peas - strawberries with balsamic
  3. Still cleaning out the fridge as we are going on vacation on Wednesday. Am making potato salad to use up the scallions and a couple of eggs.
  4. Yesterday I made Eggs Benedict with prosciutto. It was delicious.
  5. Other. Homemade. Always.
  6. Our small town literally has only fast-food places. That is it. We drive 3 hours to the city when we want to eat out at great high-end places. Thankfully I love to cook so it is rarely an issue.
  7. I'm surprised I haven't done it before! Anyway, there are no safe places to eat out. We tried one last night but the employees had no clue about celiac, gluten, allergies, etc. so we just returned home. Then we go on vacation Wednesday!
  8. Hi there! Would you be willing to make gnocchi? It is simple, actually. You can even use sweet potatoes and ricotta. I can post recipes if you are interested.
  9. Naturally gluten free at our house. I love to do fancy schmancy such as vanilla bean poached lobster, mushroom pate, seared duck with port cherry sauce, poached or seared scallops with vanilla cream, standing rib roast with Yorkshire pudding, roasted leg of lamb, celeriac puree, wild mushroom risotto, pots du creme, creme brulee, etc. When we have guests...
  10. Chopped off a piece of right (dominant) thumb yesterday on my mandoline so am not cooking. DANG IT! Amazing how much we take our thumbs for granted. Makes things tricky (like this typing which is taking ages).
  11. We are getting a bit of snow today and there is some in the forecast for tonight so again I am making comfort food: Meatloaf with Red Wine Glaze Creamy Mashed Potatoes with Caramelized Shallots and Mustard Seeds Saffron Glazed Carrots
  12. Good call! Duh. Can't believe I let that one slip past me. It's true - you must be consuming the equivalent of 3-4 pieces of bread a day for 3 months before your scopes are done.
  13. Great news! Glad you are having great follow up. Stop that cheating - it is NOT worth a few minutes of pleasure, is it??
  14. I had no obvious symptoms and only found out I have celiac through genetic testing (my sister is gluten intolerant). After the shock wore off, I went strictly gluten free and have been doing so for just over a year. No, I do not feel any better but am so used to being on this diet that I will not go off it. The biggest thing for me is knowing what can...
  15. Excellent! We leave Wednesday for the month of May with no celiac-related worries! Have the time of your lives.
  16. So true. That's got to be it!
  17. Welcome here! You mention not eating wheat - I'm just checking to make sure you know that you also cannot consume anything containing barley or rye as well. Most advise us not to consume oats until our guts heal (even certified gluten free - there are differing opinions, of course). Congratulations on your first European trip! My husband and I travel...
  18. It is very normal where I live in Canada. Half my family hugs like crazy; half stand stiffly and look as though they are being tortured. I am a hugger but as a very private person only hug those I know very well. Having said that, the odd time I hug spontaneously if I am moved to do it emotionally (i.e. if someone is terminally ill).
  19. I think she just swallowed a parrot with a red tail and for some reason the camera guy didn't notice.
  20. That is SO true. It usually takes a very difficult situation in our lives to build our perseverance and subsequently character and strength. We learn such valuable lessons! In fact, it may sound odd to some, but though I LOVE food as much as I do and though I did not feel sick at all eating gluten, it is a good thing I was diagnosed because it has taught...
  21. Cleaning out the fridge in preparation for vacation: Thai Curry Shrimp (using up some lemongrass, kaffir lime leaves, shrimp paste, etc.) with lots of extra sauce for mung bean noodles. I love making curry pastes - the house smells so incredibly aromatic! Unsure of the sides at this point.
  22. How about while we are on vacation soon? Then when we get back you will be settled nicely and can have a lovely meal waiting for us.
  23. I agree that you absolutely MUST follow the diet. No cheating. Even if you do not feel sick (I didn't feel sick at all from eating gluten) just think of the internal damage this could be causing. You do not want to deal with related illnesses in the future. When I was diagnosed I was shocked but that quickly faded when I realized the gravity of the situation...
  24. Many cakes are made gluten free naturally anyway so your friends have no reason not to love them! Yeast breads are a different story.
  25. We are going on a long-haul flight next week and will be traveling for just over 30 hours. I dread the flights horribly (chronic pain). Turbulence is one of my nightmares, being forced to sit in an awful position with extreme pain. Have you ever seen those towelettes wrapped up in a long roll that look like candy sort of? They are dry but all you do...
