  1. Yes, vanilla extract would be fine. If you want, you can drizzle in agave syrup instead of maple. The only limit is your imagination! Orange juice and zest is lovely, too. Heck - whip in some pumpkin puree with a bit of cinnamon. You can also infuse honeys with flavour. Salted butter may be a touch salty BUT in this case, a bit of salt would be nice...

  3. Hi! You are going to have such fun with your waffle maker. I believe it is the little things that can really elevate a dish. All you do is blend soft butter with a glug or generous drizzle of maple syrup and blend well (or even do it in a mixer). Then add some ground chipotle chile or just buy it already ground. Just a shake or two. Or leave it out...

  5. Aside from savoury applications, I could easily take it or leave it. I like chocolate but never need or crave it (unless in chili, etc.).
  6. You are so right! Rare beef and chocolate do have an infinity for one another. Even better is a sweet/savoury sauce made with gorgonzola and melted chocolate with rare beef.

  8. Really? Mine is gluten free. Whole spices should be safe but I suppose if they use blends they may not be. Just googled several sources and see where this may be true. I also read many articles said many brands are gluten free. Thanks for the info! It is good to know. I make my own Indian food but this is useful info for those who eat out.
  9. Not much time to cook anything extravagant tonight so I made spicy roasted butternut squash, carrot and poblano soup with a drizzle of pumpkinseed oil. That's it!
  10. Oh, I am sorry to hear you are having such a rough time. I have no medical advice or recommendations but just know I am thinking of you. There is always hope. ALWAYS. Hang in there, ok? Maybe have a hot cup of tea and a nice long bath with a good book.
  11. I was able to reintroduce it into my diet without and problems whatsoever after about a year. Now I can eat all the dairy I want very happily. :-) Hopefully you will find the same. Admittedly I had no rashes on dairy but lots of gas, diarrhea, etc. In fact, my lactose or casein intolerance gave me worse GI problems than gluten. The best of luck to you...

  14. I would easily drive 30 min for a great loaf of bread. The nearest bakery is 3 hours away and it is not even guten free. They offer a gluten-free cupcake one day a week but obviously unsafe for us. Thank goodness I love to bake! How are your delectable doughnuts? I am very jealous of those thingers.

  16. Luvs2eat, I use my homemade baguettes as I do not like Udi's or most others. As you know, baguettes are chewier and less crumbly which makes far better stuffing. I personally would not use any commercial sliced bread for it but that's just me. I like distinct chunks of bread, not mushy stuff. Wow, would it ever be great to live near a gluten-free bakery...
  17. I empathize as an Albertan! I order tons of culinary books frequently but there is far, far less kitchen stuff and food to order than on dot com. Not fair!
  18. It tastes precisely like roasting chestnuts. Thankfully the gelato is scrumptious in Croatia as well. Oh, how did hazelnut not end up on my list? Yum!!
  19. You are brill. Speaking of gelato...what is your favourite flavour? I have been to Italy lots 'n lots and my faves include grapefruit, limone, meringue, wild strawberry...anything tart and/or fruity. Also love pistachio and chestnut.

  22. Good idea! Thick flannel jammies with a hot chocolate sounds delightful as the snow continues to blow and swirl ominously out there. Chipotle maple butter tastes so good you wouldn't be able to stand it. Almost as good as Irish's prime rib and a bunch of other stuff. :-P
