  1. Mmmm...I love making Osso Bucco! Good to see this recipe includes gremolata which really makes it shine. Yum!
  2. Yes - three to four months are recommended with eating the equivalent to three to four pieces of bread each day. Don't forget to request lots of biopsies - at least 8-11!
  3. Finger foods! - Buffalo-style Chicken Meatballs - Roasted Truffled Sweet Potato Crispy Fries with my yummy hummus (with sumac) - Pancetta and Sundried Tomato Pesto Stuffed Mushrooms - Crispy Wonton Wrappers Stuffed with Braised Lentils and Preserved Lemon
  4. Extremely simple tonight: Chicken a la King Salad Calabrese I think I just might feel better enough tomorrow to make something fabulous and interesting!
  5. Lucia, I've been salivating at YOUR dinners, too! They look great. Cooking is such a pleasure.
  6. 100% YES. BUT only if it was guaranteed to work after a lot of research went into it first AND it was proven not to cause any other health issues.
  7. Although I did not get sick from eating gluten before my celiac diagnosis, I still refused to touch it (and still do) and always will. So, no, I have never done this because if I did and did not get sick I may find myself slacking a bit. Not only that but I need my villi to be strong and healthy. Plus the thought of potential future problems keeps me on...
  8. Baked crispy onion rings are a treat, not to mention vegetarian! Yummy. I have a craving for them at this moment so think I will make some (though I just ate dinner).
  9. Ciao, Veronica. I just finished posting this under the other Italy thread a moment ago but want to add here, too, how much I love Italy (we currently live in Canada) and how wonderful it is to find great gluten-free restaurants, etc. I feel safe eating there because people are so aware and knowledgable. We will be in Venice in a few weeks. Can you recommend...
  10. Ciao, Veronica! I love Italy and have been there many times. My husband and I own a house in Istria and fly into and out of Venice. We hope to be there in a few weeks. Italy is the easiest place to be gluten free I have found. Are you aware of any gluten-free places in Mestre? We will be staying there this time as it is so close to the airport (early...
  11. You think like me. If there is something I want I find a way to make it gluten-free! Homemade is always better.
  12. Simple again but oh, so good... Roasted Apple, Butternut Squash and Leek Soup with Spicy Pepitas and Pumpkinseed Oil Caramelized Onion Focaccia Bread
  13. Lots! Muscovy, mallard, domestic tame (my brother raises them). Are you looking for suggestions for roasting a whole duck, duck breasts or other (i.e. foie gras, duck confit)? I have tons of duck recipes as duck is one of my favourite things in the world to eat! Do you want recipes or cooking techniques?
  14. Leftover cold pizza and lactose-free yogurt.
  15. Finally not feeling like I am half dead! After not cooking for over a week I am back in the kitchen, doing what I love most. No longer very nauseous. Just getting over an intestinal infection. So, we're having simple: - roast chicken with herbs, garlic, etc. under the skin and roasted lemons - makes great jus with a splash of white wine - roasted...
  16. Me, too, because I just love(d) gluten-y food so darned much! I will never, ever forget it. Not only that but I find it soooooo hard walking past bakeries, patisseries and pizza places (especially in Europe) without feeling sad. I am not to the place yet where I am comfortable attending social events that revolve around food such as church banquets...
  17. Some supplements/medications must be taken with food so it would be unwise for many like me.
  18. You are right - it CAN be done! I absolutely refuse to allow it to prevent me from doing what I love most. Good for you for starting the website. Croatia is stunning, isn't it? Our house is in Istria, a 2.5 hour drive or boat ride from Venice. Our house is 200 years old, traditional stone, surrounded by forest and vineyards and olive groves, as well...
  19. Sadly OP included fruits on her list. I was going to recommend using homemade applesauce or apple butter but that wouldn't work, either...
  20. I have always had this problem as well but do not see a link to my celiac. Benadryl, morphine, Demerol, Oxycontin - you name it, they have kept me wired and wide awake! However, my chronic pain management doctor told me that those with fibromyalgia (myself) are extremely sensitive to meds and that side effects can be much worse than those who do...
  21. Sadly we did not this time for some crazy reason. We had to pay $300 each to cancel. We know better - we travel a lot! A very foolish decision on our part.
  22. The anxiety does not stop me from traveling - we own a lovely house in Croatia and Croatia is where my heart is. However, as I posted on another thread, we had to postpone our trip (we were to be leaving this past weekend) due to my being ill and in a lot of pain. Severe chronic pain and travel causes me far more anxiety than celiac does because I cannot...
  23. Gail, you make a very good point. The word "postponed" is far better than "cancelled"! I feel extra bad about this as my sister was coming with us (she is currently on leave from work and returns to work January) and she has never been to Europe. It was such a difficult decision to make but both she and my dear husband are very understanding. I'm blessed...
  24. Mushroom, thank you so very much. I needed your hugs today and they make me feel better already!
  25. Oh, Isobel. You understand me so well! Thank you so much for your kindness.
