Peter has given you a great start. As for keeping gluten free not as expensive, try to stick with shopping on the "outskirts" of the store. In essence this means - meat, fruit, veg, dairy and rice. All of which are not so expensive (like gluten-free breads etc). For the first month or so it's actually better to avoid the replacement foods because your stomach... -

In Safeway, there is back bacon slabs that you slice yourself. These are labelled gluten free. Also, their old fashioned peanut butter (needs to be stirred) has only "peanuts" on their ingredient list. I use it, never had any problems with it. -

I've never linked it up to gluten before but I used to get sporadic heart murmur style hurting heart/ chest pains. Don't get them anymore. Except for earlier this week when I decided to try a soy drink for added protein while I work out. So, it would not surprise me that gluten and/or soy could cause chest pains. -

If the muffin pan has no visible scratches then a good wash plus tossing it in the oven when you run your self-cleaning function will get the invisible ones. Never tried it myself as I don't have a self-cleaning oven.... maybe the pan would melt.... Replace the rolling pin. Baking soda is a wonderful cheap way to clean off residue, stains and baked... -

I would just stick with eating gluten free. There is no sense in eating gluten just to confirm your aren't insane. I never did get positive blood tests. I had been gluten free for 3 weeks before getting tests done. So, for you to be 6 months gluten free- they won't come up positive. Mine did come back with low end of normal nutrient levels.
