And how on earth are they going to prove who ate a slice of bread? Especially if you can prove gluten bread is bought for the non-celiacs?? Oh, Canada... you are a pain in my bum... I don't even qualify because I am "only" gluten intolerant and only proven through my own trial and error. At least I don't have THAT headache to deal with. -
What you do is openly pick your nose in front of them, wipe it off on your shirt then stick your finger in the dip and say, "What... you said stuff can't be transferred in this manner. It's only a little bit of booger and I wiped it off, there's no contamination in the dip- go on... eat it!"

I felt a difference after just two weeks of avoiding the obvious gluten sources. Then once I talked to someone about the gluten problem, I avoided the less obvious sources and felt an INTENSE difference after about a month. I suffer with head issues before gut issues. -

I think it might be better still to just use half the mix and half the rest of the ingredients. If not then I think that freezing the uncooked dough will help it to keep for longer. -

All the advice the others have given you is great. I can give you some advice for eating at school though (I work in a daycare). The tables in kindergartens and daycares are used for both eating and playing. That means the playdoh is used on the eating surface and trust me- it does not wash off well. Their gluten free pizza isn't all that bad, I've only had it once. The gluten-free pizza bread soaks up a lot of the pizza sauce so it looks kinda dry but it isn't. Next time though I am going to ask for extra sauce because that's how I like it. -

However, right beside the pasta is bags of organic wheat flour, wheat gluten and everything else under the sun we can't be having. I found that taking ibuprofen helps with reducing some of the inflammation and redbull helps to reduce the brain fog. Taking a multivitamin seems to help smooth out my nerves (I'm getting testing done for vitamin deficiencies- hopefully then I'll know how much to take to prevent it).
