I'll be fine. We all take a lickin' now and then and keep on ticking. I'd never still be up at this hour but my neuro symptoms have kicked in full blast! That server and the manager of Olive Market didn't seem like they just fell off the Turnip Truck. My guess is that they were following procedure, except that the server made a mistake. I could be...

ARCHIVED What's For Breakfast Today?
Marilyn R replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
Papaya and apple. If I'm feeling better tomorrow, I'll have a gluten-free toasted bagel with cream cheese, smoked Alaskan salmon, capers and minced hard cooked egg white. -
I did, in fact get glutened. Threw up 3 times at 10:30 a.m., 22 hours after the lunch, and I still have nausea and no appetitite. Peter & Lisa, I used to avoid buying grated cheeses because I didn't know what cellulose was. I've been able to tolerate grated, bagged cheeses from the dairy section without a problem for months. The server...

That's it in a nutshell. DP said, "Aw, you caved in amd we had safe salmon and grilled chicken leftovers here you could have made a great lunch with." He was upset that I didn't stick to my guns about Wendy's. Maybe I won't be sick, but it's stressful just wondering if I will be, and I could have had a perfectly wonderful lunch if I'd packed it. (Romaine...

Thanks Lisa, I actually asked the server to show me the cheese. She flipped opened the top of her grater, and the cheese was in fact "dusted" with flour. The manager returned with some shaved parmesan on a plate for my lunch. My co-worker said the flour was only on the top, so it should be okay. I don't know if it's just a local practice, but it blew...

A co-worker wanted to treat me to lunch because I helped her out with her work load fairly significantly. I told her it wasn't necessary and actually prefer to pack my lunch. She told me I could pick the restaurant of my choice. She sent me a text message this morning asking where I wanted to go. I told her I'd like to go to Wendy's. She insisted that...

ARCHIVED A Baking Failure

I got a quart of local honey for $16, and it's really good. I see stevia at the local farmers market frequent ly, but have never puchased it. It's really easy to grow herbs where I live...maybe I'll get Stevia next time I go there. Mushroom, I have no idea how to replace the consistency of sugar in a recipe. -
ARCHIVED A Baking Failure

That explains things. I let all ingredients come to room temperature before starting the muffins (other posters on Elana's site recommended that, but I used a fruit with more liquid). Maybe if I strain the pureed papaya in cheescloth or used part banana and papaya her recipe would work. Maybe I just had dumb luck the first time, but those muffins were... -
ARCHIVED What Are The Healthiest Grains?
Marilyn R replied to kaygato's topic in Gluten-Free Recipes & Cooking Tips
Quinoa set me back so bad the one time I tried it. Gtanted I got it out of a bulk bin at a health food store (bad move),but I'll never try it again. -

The recipe was from Elana's Pantry, but I adapted it to use the fruit I had on hand, and I figured muffins would be better than bread since I didn't have the right loaf pan. I reduced cooking time accordingly, and didn't add the cool down time. Thanks for the tips! (Including keeping DP.) -
I tried baking muffins that I've made before that turned out good then, but used almond flour this time instead of a gluten-free flour mix. They ended up flat and ugly and not done in the middle but crispy on the top. I pouted and ate one. I was astonished to see that DP polished one off out of the muffin tin. I questioned him about it, whether...

My guess is that whole grains would be your best bang, like brown or black rice. -
ARCHIVED Papaya Applesauce
Marilyn R replied to Marilyn R's topic in Gluten-Free Recipes & Cooking Tips
I think you'll like it, prickly. Our local Wal-Mart carries Papayas now, have you checked there? I'm picking mine off a tree I stuck in the ground about a year ago. I planted it too close to the house, like I always do. I figure I hit return on investment: the sappling cost $25 and I've consumed 5 papayas, gifted 3, and have a crop of them getting ripe... -
ARCHIVED Papaya Applesauce

I'm glad it came out good, thanks's for letting me know. It's funny, you reminded me that I never have liked sweetened fruit. Even when I was a child my mother would make strawberries and peaches separately for me from the bowl served to the rest of the family. I always wanted mine plain, without sugar. The pink lady apples are pretty sweet on their own... -
My lab values are out of range high on potassium. Even though I have a light appetite, I crave foods high in potassium and eat them consistently. I've been to a number of specialists, they haven't focused on those out of range lab values. I think if your body craves something, it's telling you something. And, yes, I think your body can respond that...

ARCHIVED Papaya Applesauce
Marilyn R replied to Marilyn R's topic in Gluten-Free Recipes & Cooking Tips
Let us know how it comes out! You didn't ask, but the papaya should be yellow or orange in color on the outside (vs green, like you see in the market) and sort of soft. They ripen like a banana. I've got frozen mango, so please do report on the mango witches brew, lol. I made another batch tonight! -

ARCHIVED Papaya Applesauce
Marilyn R replied to Marilyn R's topic in Gluten-Free Recipes & Cooking Tips
Hi love, Do you peel the apples first or roast them whole? I'm thinking, but I don't know since I'm not an experieced cook that if you roasted slices they'd dry out. How long do you roast your apples for and at what temperature and whole, halved quartered or sliced? I guess if you roast them whole you get a break to let them cool. I like recipes... -

I have a torrid love affair with mangos too! I hope you love it! It's hard to find a ripe papaya when you want to make something! I've parked my car in the sun with a papaya in a bag with a ripe banana or apple for a day or two to speed the process up.) In the old days, I used to stick my yeast rolls in the back seat of my car in the sun to... -

Hi Teddy, welcome aboard! You have so much to look forward to, your life is going to be so much better. I hope your doc was able to get you in soon for the endoscopy. Don't worry about the procedure itself, "it's a piece of cake." The only thing I wish I could have again is the strawberry cream cheese croissant at a local french bakery. My DP used... -
ARCHIVED Celiac, Fibromyalgia & Very Limited Food Tolerance
Marilyn R replied to cindy.k's topic in Super Sensitive People
Hi Cindy, I don't have fibromyalgia, but I have a kissing cousin, discoid lupus. When it seemed like I was reacting to everything I ate, root veggies were good for me. I sought out veggies I'd never eaten before like Rutabegas and turnips. Radishes, even though they wouldn't traditionally be considered mild on the stomach, were fine. All squash... -
I'm not really into cooking, but I do it to be able to maintain. This recipe was one of those accidental things that turn out delicious, so I wanted to share. Papaya applesauce: 4 apples of your choice, peeled, cored and sliced. (I used 2 Pink Lady and 2 MacIntosh) 1/2 a ripe papaya, peeled, seeds removed, chopped (There are U-Tube videos...
