Reading your post reminds me of when I was first diagnosed...it's a bit of a roller-coaster ahead for you...so, just hold on, and you'll soon enough be coasting into MUCH better health - I, too, am casein-intolerant...I waited to go CF, though, as I knew that gluten-free would be hard-enough... To add-on: I have HLA - DQ-8 - the gene found in only 5% of Celiacs. When my 'obvious symptoms' developed I was in grad school. working 36 hours per week, had been held up a gun point and the robbers came back to the house during the night, and tried to brak in, so we had to move the next day to protect ourselves (as the gang was shooting people) .... -

Hi - It depends on the Lab - different labs use tests from different companies, therefore the 'positive range' can vary from lab to lab - After I was gluten-free for over 50 days, my IgA was 29, but the lab's test had a "positive" range as equal to or greater than 30...because I had been gluten-free for 50+ days and had a very-near-positive IgA, and a... -

'His" Tangy Bang is good, in my opinion - I use it to add to stir fry veggies, etc - BTW, if you order from the Mr. Spice web site, it's cheaper than at other sites, and you get free bottles with larger orders.... I think it's worth trying different gluten-free products like these, seeing which ones you like and then trying to copy the ingredients, if... -
It's actually 'lactase': "The enzyme that splits lactose into glucose and galactose is called lactase, and it is located on the surface of the small intestinal villi," so when the villi are damaged, the lacTOSE intolerance results - This is why Celiacs often can return to consuming lacTOSE after being gluten-free for a while - --------------------...

Yep, :-) sometimes reading our forum threads can make it sound scary to eat anywhere.... It's REALLY nice to see lots of good hints/info being added onto this thread to add to our safety, though! The companies could benefit from some of this info, too...I am thinking of doing a Celiac Disease awareness volunteer thing with restaurants and chefs in...

Just chiming in - I don't think Stef, or anyone, is 'condeming McDonalds' that I can see - I think Stef was simply saying that McD's employees are not trained in this stuff - Anyway....as already said..... Just adding some info about going CF (casein-free): Ghee is OK - "Clarified butter". I like it :-) I would not go soy free until trying gluten and casein first (unless you test positive for allergies to soy). I feel it is best to get rid of the 2 obvious offenders and then see what happens, because you do not want to eliminate all foods at once...BUT... -
