  1. Gluten Free Pantry French Bread and Pizza crust is really good and really easy. It will be a little less sticky than the bisquick. I put it on the pan, flatten it as much as I can, then cover it with plastic wrap and roll it the rest of the way.   3. Good advice has been given above. My only other thought on the onion. If you keep the skin on and slice in half. You could peel and slice one half and keep the other refrigerated. I think it will keep longer with the skin on. Just try to make sure when you store it, the cut side is down, so it somewhat seals in the plastic bag or container you store...

  6. I have gotten lazy. I figured out I could throw everything in my Kitchen Aid and mix it. It doesn't get tough like gluten pasta does.
  7. I buy my xanthum gum in the same place I get my Bob's Red Mill products, though I would assume other companys may also sell it. I can't tell you exactly what it is, but I know it is what gives gluten-free bakery a similar "chew" to gluten bakery. It is expensive $10-14 per bag, but you only use a tsp or so depending on what you are making and the amount...
  8. If I am reading this right, you are not actually working in the bakery. Airborne flour could make you sick as it would get into your eyes and nose and could therefore get into your stomach. If you aren't actually working in the bakery, I can't imagine how just the smell would make you sick.

  10. Some of us celiac avoid products processed on the same equipment as a non gluten-free food. I don't know if that is an issue for you or not. I am not usually sensitive to that, so I really don't pay much attention to it. If the ingredients look gluten-free, I try it. For example: basic corn chips usually have limited ingrediants and none contain gluten...
  11. I have found a recipe for "ritz" crackers, but IMHO it's the butter you add that makes it like Ritz. I think it would work, if you haven't found a cracker. I never though of using it for those bars...which I used to make pre gluten-free. Search it here...I think I saw it on this site.
  12. Are you using xantham gum when subbing gluten-free flour? That can make a difference with texture. It will never be the same, but they can be close! Good luck!
  13. I made the Bob's red mill White Bread recipe off the potato starch package in my "old" bread maker, with no problems. I did watch while it was mixing, though and a couple times, scraped down the sides to make sure everything was incorporated. I made no other adjustments. Good LUCK!

  15. I liked the recipe on Bob's potato starch package best. The Bob's Hearty Whole Grain bread was really good when I used their beer bread recipe on their web site. If you like a "rye" bread, this was wonderful! My son and I decided we will use this for Rueben's in March!

  22. I've only been gluten-free since August, and most of it is getting to be 2nd nature for me, but some days I do get frustrated. I love the Food Network cooking shows. On bad days I sit there and think, "can't eat that, or that, or that...". Or, if I smell something someone made at work that smells sooo good, but I know I can't eat. Most days are not bad...
  23. I am the only confirmed, however my son has been gluten-free for the last 2-3 years and won't go back. My sister is in the process of being tested but has noticed when she avoids gluten she feels better. I fear she will get a false negative because she has avoided so much for so long.   24. These are great. For more of a cracker kind of taste, I really like the Crunchmaster Crackers that my local Costco type store sells. They are gluten-free. I haven't checked if they have soy. My DH loves them and doesn't like many of my purchased gluten-free foods.
  25. When I was first diagnosed tuna from the can bothered me. I don't know if it was the soy, or what. Now I can eat it, but it took a few months before it didn't make me sick. Otherwise everything on you list should be fine. Watch for cross contamination. You replaced the cutting board, right?
