Ok so yesterday I had some of my neighbors come visit. And it is a well known fact that I can no longer have gluten in our apartment complex. But apparently it is less well known that I can't eat chocolate. (Probably because I don't make a huge deal of it. I just dont eat whatever has chocolate.) First of all, NEVER ASSUME a restaurant is safe. I made that mistake once (thankfully I caught it before we went there.). I always search for gluten free restaurants. The other reason why I think more people are being diagnosed as Celiac today as opposed to fifty years ago, is that today, we eat a lot more processed foods/fast food than people did fifty years ago. And we all know that processed foods probably are not the most cc free foods. So much of the CC issues talked about on this board are with processed foods... -

Ooh I'd much like a recipe... And no I ain't off dairy completely. (Just mostly, kinda like I always have been...My moms lactose intolerant, so I kind of grew up dairy free, but I occasionally eat a bite of cheese, or something. Not much though) But I'm good at substitutions should I feel like I need to use something else... -
My personal philosophy is that I use as much unprocessed foods as possible, and if I do use processed foods, I usually stay away from the ones that mention wheat. (Unless of course it says, good manufacturing practises are used to maintain the purity of the product, or whatever it says. But even then I am wary) But then again, I also am new to this diet...

That yellow bread stuff... aka Corn bread. My family taunted me with it the other day. Oh how I was mad. They know I love the stuff! Its a country classic! But I WILL make it gluten-free one day... once I perfect my bread makin. -
So I was lookin at my local support group's event calendar. It doesn't have much in the way of upcoming holidays other than advice on how to handle them which I have found a lot of here too. Not to say I wont go to it. But Id like to do a little something more since this is my first holiday season gluten-free. Like a thanksgiving dinner around here completely...

No offense psawyer, but that was a bit on the rude side. I am just starting out this diet. Its been a month since I last ate gluten. So yes I may be a little over cautious. But about as long as you have been on the diet I've had skin problems that I just attributed to bein dry skinned and sensitive. Never crossed my mind that I could be allergic/intolerant... -

It ain't so much the problem of them stating "gluten-free" but more of the fact that not everyone has a label stating "May contain traces of" or "Processed in a facility that...." I am so very tired of checking everything online or having people check online for me. It frustrates me to no end that many products are unlabeled. I look in the the ingredients and there are no tell tale signs of gluten. (Or any allergy info for that matter). But they don't say gluten free. They don't tell you processed on what equipment its been produced... -
Its true, and she'll be the first to say I need a second opinion, even though she's positive about her diagnosis. (Fact is she has) She also does not remove ANY possibilities from the picture...
