  1. I have seen plenty... We did have one cook and she was amazing. She always asked if I could use cheese sauce or if I needed real cheese. She was always sure to clean the grill and use different utensils. Unfortunately, she did leave and go to a different job.
  2. I am in Wisconsin...I don't eat at many restaurants either. You would be suprised at how much the cooks don't understand, even after you explain yourself over and over! I think I am a much better cook anyway, so I would rather eat my own food!!!
  3. I am a waitress at a family restaurant and it is so frustrating to hear what people say. If someone comes in and says they need to eat gluten free I am asked since I have been gluten free for several years. People don't want to listen though. Our fries our gluten free, but they are fried in the same oil as everything else, so they are no longer gluten...
  4. I have been gluten free for about two years, and it has made a dramatic change in my life. (I won't get into all the symptoms and issues I had) I have five kids and they each have there own set of issues and I believe that most of their symptoms stem from gluten intolerance as well. I also have brothers and sisters that I believe have issues. I was never...
  5. Is that a picture of the cake you made? It looks really good! I have never baked with coconut flour of coconut oil, because I am allergic, however, I know that it's hard to sub coconut flour with other flours because coconut flour needs more moisture (higher protein-I believe). Maybe switching the oils will do something similar. Also, if you sub baking...
  6. Could you use guar gum
  7. A chocolate torte sounds amazing! I am a big dessert person as well and I love baking. I did try eclairs yesterday and they turned out amazing(my sisters and mom loved them). I am going to try these individual almond-rasberry cakes tonight. I think cookies are a good idea too. So many decisions, I just love baking, unfortunately, I also love eating!...
  8. Maybe you are reacting to the raw egg yolk. I can eat eggs only if they are baked in something. Raw eggs or even just cooked eggs make me very sick. My brother and nephew have this same problem.
  9. So I live in a pretty small town and they are going to be having a gluten free dinner party for celiacs! You have to call and preregister and let them know what you are bringing. I am really excited because I love cooking and baking... Now, what should I take.. I made a few things today just to try from my new cook book and they turned out awesome, I...
  10. My celiac test was also negative. I did have allergy testing done, because I was already allergic to peanuts. I am allergic to wheat on the blood test and skin test. They did do Igg testing on me and I was allergic to alot of things, but the biggest were gliadin, gluten and wheat. I decided to go gluten free completely, it's been two years now and if...
  11. So he has a swallow study scheduled for Tuesday morning. He has been able to swallow soft food, but it still feels like something is stuck, but only when he eats. He is doing well other than that. They are still treating him for heartburn...Hopefully something will be found out soon. Thanks for listening.
  12. Thanks for the info. I did google it and it sounds so much like him. He seems to be doing a little better right now, he ate a little dinner and didn't feel like he was choking. I still made him an appointment to see his regular dr tomorrow. I will let you know if I find anything out...
  13. Does that mean he may actually have food stuck in his esophagus or he just has the sensation? He has been having alot of belly aches lately and having chest pains. We made an appointment a few weeks ago for him and then it seemed to get better. He can't walk for very long with out resting. His complaints are usually high in the belly area. He also...
  14. I was never diagnosed with celiac, however, I do have a wheat allergy and a gluten sensativity. I am sure I would have had celiac if I did the testing. I went gluten free before the test, and I won't eat it again. My son is 9 years old and extremely small and underweight. For the last few days he has been gagging and choking on his food. Since yesterday...
  15. I love black bean salsa and it is so easy to make and eat for days. I can low sodium black beans (drained and rinsed) 1 green pepper (chopped) 1 red pepper (chopped) 1 yellow pepper (chopped) 1 red onion (chopped) green onions (1 bundle)(chopped) 2 minced garlic cloves 1/2 cup fresh cilantro (chopped) mix all together and add 2 teaspoons taco...
  16. I am working as a waitress right now, and I am so careful with food. I never eat while I am working and I never have my hands near my face. However, I feel like I am getting cross contamination from some where and wondering if it could be from there. I do not live in a completely gluten free home, but I feel like I am being careful at home as well. I...
  17. Dr's don't take me seriously either. My family is a talking celiac issue, however, noone will go get tested. My sister has unexplained infertility and thyroid problems. My other sister has severe constipation and gets sick every time she eats. My other sister has severe food allergies and throat spasms all the time. My brother has epilepsy, my mom has...
  18. I have never been diagnosed with celiac. It started as a wheat allergy and a gluten intolerance. When they did the bloodtest for celiac on me, I was already wheat free, so I assume that was part of the problem. I decided I was done with gluten and it's been about a year and half and I don't miss it at all. I am frustrated that I didn't get a diagsosis...
  19. Where does his foot hurt? My son complains of foot pain in his heel and goes up his leg a little. I took him to the dr and they said it was just growing pains. I don't know if I believe them!
  20. I make my own gluten free peanut free granola bars and my kids love them...I bake 1.5 cups gluten free oats until they are brown. I bake 1 cup sliced almonds until brown. Take 1/4 cup gluten free oats and put it in the food processor to make a flour. Mix all the above ingredients together and add anything else you like. I usually add perkins rice cereal...
  21. I know how frustrating allergies can be. I am allergic to peanuts, raisins, soy, wheat, dairy, spinach, hazelnuts, cauliflower and broccoli, tomatoes (but I can eat canned and sauce) and I am sure I am forgetting some. Alot of the foods you are allerigic to are probably related to each other. For example night shade vegetables. I also have oral allergy...
  22. Eosinophills are part of your white blood count. When they did a CBC (complete blood count) on me it showed up as being very high. It can be related to food allergies, parasites, and many other things...
  23. I am making taco pizzas for dinner tonight... I use Udis pizza crust and use salsa and refried beans mixed together as the sauce...Load it with veges, taco meat and cheese. Bake it and add lettuce and crushed corn chips on top...It's one of my favorites!!!
  24. When I was going through all my allergies my eosinohpil count was really high. About 30% of my white blood count, normal is under 3%. Do you know what his count was? They started testing me for parasites, and it took a while to get my diagnosis of food allergies. I am allergic to raw egg, peanuts, raisins, wheat, soy, hazelnuts, I also have oral allergy...
  25. I thought root beer was glutened...Maybe it isn't,but I would check on it before you drink it...I am sure someone here would know for sure.
