  2. I don't know if you noticed this, but Laura has been gluten free for 4 years, she was diagnosed Celiac in 2008. She's new to the forum, but not to gluten-free. She's beyond the basics.
  3. Wow Richard, I never even thought about the whole labeling thing. That must have been so tough. I'm so glad that labeling is getting better, and there is more awareness, but still not a lot. People still think I mean glucose, and that I am diabetic...LOL Bart, your poor mom. I would have wanted to deck someone who would dare say "that's ridiculous"...
  4. Hi Laura, this just sucks so bad!!!!! I have nothing more to offer other than what we already discussed on email. I just hope some of the gurus on here that I told you about have some good offerings for you. About the idea of ovarian cancer. Didn't you just have a Gyno appt? Did they do an exam, or screen you for anything? Everyone, I would like...
  5. Sniffle....maybe after my gut is healed, I can try dairy again. It's sounds so divine!!! For now, I made a chocolate Namaste cake.....NOM NOM NOM NOM...
  6. LOL LOL LOL...you are too funny. I guess that means I have to have a couple hundred plus more posts before I can write something clever below my clown-assed cat avatar!!!! I love reading everyones titles. "glutentoligist" is my fave! You keep being Chatty Mctalksalot, cuz I love your posts!
  7. My doc recently did a stool sample and I learned that I have no intestinal flora at all....good or bad....zilch! She put me on VSL #3, which has prescription and non prescription strengths. I'm taking them in non prescription strength. You can buy them from the pharmacies like CVS, Walgreens, Target, and Costco. They have to order them everywhere but Costco...
  8. How do you make the chocolate pots de creme dairy free????? I MUST KNOW!!!
  9. I'm making; meatloaf roasted red potatoes roasted carrots I might make some sort of dessert...for the family though, not me, because I too suffer from "Chubster McFattypants syndrome" as well.....LOL Edited to add- I'm baking a chocolate Namaste cake, it's in the oven. Irish Heart- I noticed that we joined this forum exactly one day apart from...
  10. I was curious to hear your experiences of being gluten free prior to the explosion of gluten-free products. I arrived on the scene post explosion, and even though the transition was hard, I am positive that is wasn't even close to being as difficult as it was back then. My symptoms started in 1999, and reached full blown illness by 2002, but of course,...
  11. I know what you mean about potato flour...it's gross, I tried that one once when I was out of potato starch, which works excellent and does not have a potato taste. I'll bet the corn starch is the same way. I'm sure corn starch doesn't taste like corn....LOL I am def going to try cornstarch in a pinch, but the tapioca thing is really good in a deep fat...
  12. Thanks for the review. I've never made mine in a skillet, and it is a dream in a deep fat fryer....just like KFC to me. It's good to know that corn starch works well too, if I ever need to fry it in a pan versus my DFF, I'll do the cornstarch one. I wonder how it compares to the potato starch? I use to use it instead of the tapioca, and liked it...
  13. You are right, I like humor better. I've cried plenty!!!
  14. I have a severe wheat allergy. I had one allergy doctor refuse to do food allergy testing on me, and told me that I have Vasomoto allergies (allergies without a cause), and I would be sick for the rest of my life, no medications would help, and he could do nothing for me, and there was nothing I could do about it. Another doctor told me that...
  15. LOL LOL LOL LOL LOL I'm not itching, so it must be gluten-free!!!
  16. Ohhhhh OKKKKKK....I misread it. It must be because someone painted a clown on my ass..
  17. Hee Hee....it could happen, my daughter's could date a GFer, they go with me to all of my support meetings, where they meet plenty of gluten-free kids. Living without considers Celiac.com as a dating site?????? Now that's funny!!!!!
  18. I am the only one in my house who has to be gluten-free, however, my home is gluten-free and my family eats gluten-free at home. My 2 daughters (12 and 14), know how to cook gluten-free, they know how to read labels, and they know all about CC. I have told them that they would be a celiac boys dream date. He wouldn't have to explain a thing to them...LOL...
  19. I get what you are saying and I make chicken strips once a week, everyone devours them, even the kid's friends. Like you, I use to use potato starch, no rice flour though, and they tasted good, but were not browned and crispy the way I wanted them. So, I switched to tapioca flour. I simply dredge chicken tenderloins in tapioca flour, fry it in my deep...
  20. ****LIKE**** button!!!
  21. Thanks! This has been very helpful. I am sitting here glutened bad from "Rice river farms dry roasted wild rice". I ate it plain, so, I know it's the rice. I got sick while eating it, instant migraine and hives on my lips, chest, and back, followed by brain fog, joint pain, exhaustion, depression, sinuses swelled shut, my whole body is swollen, just call...
  22. LOL...I almost included that bit of advice, but decided against it because not everyone likes pasta the way I like it cooked, but you are right, good point, know one likes it's mushy, so 13 min. is correct. That is exactly how long I cook it for.
  23. MMMMMMM...now I want some juicy chicken thighs....LOL...I'm hungry for them too! They are soooo goood! I like that they sell them in the meat department already thawed. It makes it easier to pop into the oven right when you get home from work. Have you tried the Tinkyada pasta? It is superior over the other gluten-free pastas. I hope you get your fill...
  24. You made me cry!!!!! LOL....anywho, I cried the first time I ate at our local gluten-free bakery and cafe (Little Aussie Bakery & Cafe). It was so delicious and so coooooool to be able to order anything on the menu and for the first time in forever, be able to stuff things in my mouth without thinking...like the rest of the world does!!!
  25. I wish Irish Heart lived near me.....you are a lucky girl! You have an angel on your side! For my purse: My favorite protein bar is "Quest bars" I order them from their website or from vitamin Shoppe (free shipping). Those bars are delicious, gluten free, and provide 20 grams of protein. They are expensive, but worth it to me. I also like the Ostrim...
