It's crazy how important food seems to be in schools. Most of the "treats" for teachers are food-related and I hate not being able to eat something that a student brings me. -

I had a book club for work today. I'm a teacher and during the first month of the summer we (teachers) read 3 (related) young adult books and were supposed to meet today at a local Japanese place for lunch to discuss them. I didn't go. It's a great little Japanese restaurant. It's clean, nice, and very inexpensive for the quality and amount of food...

Has anyone tried substituting almond butter (or the like) in any cookies? Does it change anything? -
Are your veggies canned, raw, frozen? I was surprised to recently find out that some brands for canned veggies (green beans being the first I noticed) had traces of wheat, etc. I'd also check the vitamins to be sure they are safe.

Ugh. I almost popped a couple of pretzels in my mouth last week without even thinking. They were just sitting there and looked good. Someone once told me, also, that too many vitamins can actually have some negative effects (but I don't know if it's true / any other info about it.)

ARCHIVED Endoscopy / Biopsy Results Today

So I went to the doc to get my biopsy results today. I had a positive blood test and have already felt better going gluten-free, so I assumed (correctly) the the biopsy would be positive. Sure enough, he said there was atrophy and along with the blood test, confirmed the Celiac diagnosis. And no cancer, which he would continue to screen for every 3 years... -

What scares me about seeing bakeries having "gluten-free options" is that I'm scared the staff really only thinks that using gluten-free flour is what makes something gluten-free. Skittles says they are gluten-free on the package. No, they aren't the healthiest choice, but they should be safe in terms of gluten. -

So last night I tried to make some blackberry muffins using a gluten-free recipe from a book and Bob's Red Mill All-Purpose Flour. I still don't know what it was, exactly, that got me. Or if it even Celiac-related. Yesterday doc sent me to ER for IV fluids and today I'm finally able to sit up. No one else in my family has been sick (yet) so I don't know if it's a virus or something I ate. -

A week? All I can say is that I feel like it's the night before my colonoscopy. This is terrible. Chili powder looks OK (it was McCormick and just the powder, not the seasoning.) I think this experience is turning me off from ever eating anything that someone else touches. -

My poor stomach. I know that every stomach ailment I ever have won't necessarily be celiac-related, but this must be. I'm also very new and have only checked a few things such as lotions, soaps, etc. so far. I decided to start out focusing on food and found that cross-contamination issues alone were so overwhelming that I would need to wait a bit before taking a good look at the non-food products I use.

I just got back from the trip and learned that you can live off very little. The trip was in Alabama, in the middle of the storms, and fortunately we are all safe and sound (very thankful for strong storm shelters.) All of my frozen food was ruined and I lived off Nutella, a loaf of Udi's, and canned tuna for 3 days, but with everything else that happened... -

It's amazing how much I've learned in the past 4-5 days! I leave in the morning for the trip and I think I'm pretty much ready. I don't think I will be doing an amazing job nutrient-wise, but this is the best I could manage as someone new to the diet. I made the Betty Crocker chocolate chip cookies last week and while I've heard others give them less-than-stellar reviews, I liked them. So the longer you're on the diet, the more sensitive you typically become? Some of the reactions I read about are violent and immediate, which is why I wonder when those type of reactions started. -
