  1. I've made this bread several times and it's a pretty good substitute for sandwich-style bread. Very light, etc. But every time I cook it, it has this big "bump" on top and will slightly collapse (but not too bad - the pictures were taken after it fell a little.) Is there a way to avoid this bump?
  2. I teach middle school and have had a few issues so far this school year (we start back at the beginning of August.) If you have to be in the classroom for eating, etc. my advice would be to create some type of "gluten-free" area that is in a small space where you can freely eat. You probably can't eat when they do if you're having to go back and forth...
  3. Life isn't fair. Yeah, it sucks to have to bring your own food or worry about CC, but there are many more terrible things in the world. Just go and enjoy yourself and if you're not comfortable with the food that is prepared, bring your own or eat beforehand. It doesn't have to be elaborate or fancy. Ever since getting my diagnosis in April I've...
  4. I'll third it. Friends may not always be as supportive as you wish, but they certainly don't try to harm. Would they purposefully add sugar to a diabetic's food?
  5. Yes, but my point is to the OP who says the article sounds wrong. It's not about feeling sick, it's about damage to the small intestine.
  6. This article is about the effects of gluten on the small intestine, not about the other symptoms that can accompany eating gluten.
  7. Wonderful recipe! I've been using it almost every Friday night over the past 2 months and my kids and I both love it! It certainly heats up better than most gluten-free crusts as well! I also melt butter and add garlic powder and salt and brush it on the crust when it comes out of the oven the final time - reminds me of Domino's crust. I have even...
  8. First day back at school for teachers today. Our principal always has some type of activity for this day back and during the afternoon the entire faculty was taken to the bowling alley / arcade / laser tag for team building and, along with it, they had pizza and soft drinks. Even though the event was a surprise, I saw that it would include lunch and...
  9. I agree with others - if you don't have an immediate reaction to gluten that will ruin the day, go ahead and act / eat "normally." Then you can begin your gluten-free diet. Your wedding and accompanying events is something that you will remember forever. Don't stress yourself out (and possibly become sick from it) by trying to begin a new diet on that...
  10. Definite hair loss for me starting when all my other problems did - about 9 months before my diagnosis with celiac. At the beginning of the summer I even noticed my scalp was sun-burned when I had my hair pulled back into a ponytail (no part.) I've been gluten-free for 3 months now and do take vitamins (A-Z Women's, Walgreens brand with gluten-free...
  11. I'm not trying to offend anyone. I wasn't saying that people with celiac are hypochondriacs. There has been more and more awareness regarding celiac disease - the most recent "All You" magazine even mentions it as a possible cause for fatigue. The people I'm referencing are the ones who would open the magazine, read about celiac, and say, "Last...
  12. Edit: Just saw the part about diabetes. My post is referencing only the celiac. As a teacher, I've taught several children with different dietary restrictions. I can tell you that to maximize the response of the school faculty, your best strategy is to enter into discussions with what YOU (not they) can do to help your child successfully navigate...
  13. As others have mentioned, I'd double check everything to make sure there is no CC. Little things - vitamins, other medications, toothbrush, etc. Have you spoken with your doctor about the anxiety? If it continues and other things don't work, he/she may be able to either prescribe something or give other recommendations for dealing with it.
  14. I'm referring to conditions that result from the malabsorption of nutrients due to the lining of the small intestine. It seems like there is some sort of competition for a label - I have no idea why, though. While I agree to say whatever works to make people understand what you can/can't eat, IMO medically they aren't the same thing.
  15. I'm also 3 months in and have the same issue with cramps. They definitely feel more menstrual than stomach, but they happen even when I'm mid-cycle. Not sure if it's celiac related or not. My family has a pretty strong history of GYN problems, so I hesitate to blame it on celiac.
  16. So I'm hitting my 3-month gluten-free mark. Go me. Quick background. Started having problems August 2010. Lost 70 pounds between then and April of 2011, when I had a positive Celiac test. Endoscopy later that month came back positive as well for Celiac. GI told me he'd like to see me gain 10 pounds in 3 months, which I accomplished just this week...
  17. Both of my kids said they were softer the 2nd day. Of course, ours were also under a layer of milk chocolate, which can make anything taste good. =)
  18. Most likely, your doctor's office isn't the place that actually ran your test. While they draw the blood, they will send the blood somewhere else for a celiac panel.
  19. The problem with labeling it all under one umbrella is that these are different disorders that just so happen to share some common symptoms and a common solution. However, people with Celiac Disease need to be monitored for other conditions, due to the absorption of nutrients, while people who are gluten intolerant and/or sensitive don't have the same...
  20. With the gluten-free Rice Krispies coming out I was excited to make Rice Krispy treats and did so the first day. While they weren't bad, they were a little less crisp than what I remembered and my husband suggested just making Fruity Pebbles treats instead. I used the same recipe as for Rice Krispies, but just substituted Fruity Pebbles instead. As...
  21. The only time I've eaten off a buffet so far is first thing in the morning when I was at a retreat. I was the first person to get to the buffet that day and I got some fresh fruit before anyone else had the chance to drag their plates across it. My biggest fear with buffets is CC - people with bread and such on their plates passing over all the food....
  22. We mark gluten-free utensils (bought specifically after diagnosis) with a special colored duct tape so we all know. We have a small section of the kitchen that is gluten-full and it is the section that is used the least. Pretty much, it is only used to prepared gluten foods and nothing else. We've also found that things such as the utensil drawer needs...
  23. Hahahaha. This would apply to my son as well, although with the amount of peanut butter he's consumed so far this summer, he just may bleed it.
  24. I think the author of the blog linked in the first post was mainly trying to say that people who buy gluten-free (processed) foods from a health food store are not receiving health benefits because they are still eating processed. It seems like her initial attempt was scolding those who are on a gluten-free fad (and didn't really incorporate celiacs) but...
  25. I would assume if something is labeled "Gluten-Free" on the outside of the package in large print from a major company, it would not be subject to CC. While I don't believe companies truly care about what they do to people, they certainly care about money and potential lawsuits - it would shock me if a company as big as Kellogg's didn't cover all their...
