  1. This is the problem with gluten-free being a "fad diet." And with those people who go to restaurants and ask for a gluten-free menu and say something like, "I'm trying to cut back on my gluten" or "I had gluten on Friday, so I'm really trying to be good this week." It puts it into the server's heads that it isn't a big deal.
  2. I was looking at the recipe for "Ultimate Chocolate Brownies" on the back of a bag of chocolate chips and thought, "I bet these would be easy to make gluten-free." Sure enough, they are awesome.   3. I haven't done it much, but have been successful a few times substituting a gluten-free flour mix in for a specific recipe. As someone else said, the less flour that is called for, the better the results seem to be. I've read some books that discuss the qualities of all the different flours and how they can change the outcome, but so far I've only tried...
  4. I'm the same way. I get brain fog and usually pinpoint it to a recent CC. The best thing I've found that helps me is lots of water. I've tried caffeine, etc. but nothing else seems to help. The water thing could be completely mental, but it does seem to make a little bit of a difference.
  5. It does certainly suck for people to not take you seriously. If they don't like how you eat, that's their problem, not yours. I'm a people-pleaser and find it hard to not care when someone is criticizing me, but sometimes I know you have to just let it pass and try to not worry about it.   6. I'm not familiar with Candida, but I did lose a lot of weight (approx. 70 pounds) before being diagnosed with Celiac and it's taken me about 6 months to put on 10 pounds. This may just be my body, but I found it helpful to eat dinner (or a snack) later than I was used to, just before going to bed. Nuts, nut butters, etc. are also really good for helping...
  7. My husband eats gluten when he's either away from home or eating by himself, but when we're eating a meal together (or as a family,) he generally eats gluten-free. This is really more about convenience of only fixing one meal rather than two and avoiding CC than it is about cravings, though. Maybe slowly introduce him to gluten-free foods or, more easily...

And I had some food sent back for a variety of reasons - including some that were completely ridiculous, "I forgot I didn't like alfredo sauce." While I've only been reading about Celiac for 6 months or so, this is the first time I've read about someone having a positive blood test and biopsy and a doctor saying they may not have celiac. Since the "Gold Standard" for many doctors is a biopsy, it makes no sense to me for him/her to say that you may not have it.
  13. We have separate sponges for use around the sink and they are kept on separate sides of the sink in a container and never cross. One side of the side is used for gluten pans / pots and the other is used for gluten-free.
  14. Don't expect anyone else to accommodate your dietary needs. Even family. Eat before you go. Bring fruit, etc. Yeah, it sucks. I ask myself, "will this one meal really be such a big deal tomorrow?"

  16. There has also been research done that points to celiac and non-celiac gluten-intolerance being two different monsters. The treatment for both, of course, is a gluten-free diet.   19. They were only gluten-free for a month. That isn't enough time for the villi to heal.
  20. I made this yesterday and just had a piece of it with dinner. It's great! Very similar to the Land O'Lakes bread (minus the butter.) Mine did also sink some in the middle and the cooking time was about 15 min less than what was listed as the minimum, but overall it turned out well!
