I would *love* to have oats again. But I don't think I will. Before being diagnosed with celiac disease, I was completely asymptomatic - well, except for the osteoporosis I might be one of those people who react to oats - but asymptomatic there as well And wouldn't that suck? When I used the Ener-G stuff my foods tasted all chemically (And not in a good way!) When the recipe calls for more than one egg, I usually use one "egg" made from Ener-G (for the leavening) and then the rest of the "eggs" from 1/4 c. of whipped tofu (each). I had an entirely painless endoscopy too Don't worry about that part (Never had the colonoscopy but I've heard that the preconceived notions are a lot worse than the actual procedure.) As for worrying about what they will find... don't be nervous about them finding celiac disease! They discovered mine in May and my whole world turned out better... -

I've been thinking about the fruit thing.. My doctor allows "grains" at the very last stage of his nutritional plan. Sugar is never included, but I'm okay with that. Ahh... "The China Study." I have this book - fascinating and truly well researched. Look at it on Amazon or consider checking if out from the library. (Warning! It does tell you to become a total vegan! But most of the problems that it associated from "animal protein" is specifically casein, so who knows about chicken or fish ) Good book though...

The only thing about getting it cultured is that I don't know what else they could try..? One doctor did suggest (in April) that I have "vaginal eczema" - but I don't know that I believe this because A- I don't have eczema anywhere else on my body, and B- why would it suddenly show up *just in my vagina* when I'm 32 years old? I have not tried gentian violet or three-lac. So, I guess I haven't tried *everything* - It just seems that way! Tiffany - no, I haven't had it cultured recently - but I'm sure it's yeast. Fortunately, I've found a doctor who addresses intestinal issues and is furious that few other doctors acknowledge intestinal candida.
