fantasticalice replied to Newbee's topic in Gluten-Free Recipes & Cooking Tips
Are you eating dairy? We can no longer eat dairy! After going gluten free for over a year I, who had no problems (my daughter is the one) can no longer eat dairy. Bummer till you read about milk & how bad it is for you. On the other hand, my rosacea is far better & the adult acne is gone It's been a win-win for me and since I gave up all... -

ARCHIVED Large Danish Dough Wisk
fantasticalice posted a topic in Gluten-Free Recipes & Cooking Tips
"These whisks are fantastic for mixing large quantities of heavy batters and doughy concoctions. I have both the large and small versions. Great for mixing meat loaf, potato and other salads in large amounts. No more need for latex gloves when mixing. Makes mixing so much easier and cleaner." Some of you have asked about breadmachines, KitchenAid mixers... -

Just read on Anna's site that they use xanthan gum that does not contain corn! Wow, that works for me because I think we are eating too much corn!? Take a look at Anna's site, I think it's Anna Bakes Bread. Frugal Gluten Free has King Arthur Mixes 1/2 price for a week. You cannot go wrong with KA! -
ARCHIVED Time For A New Toaster
fantasticalice replied to dcns65's topic in Gluten-Free Recipes & Cooking Tips
We toast a LOT in our house and have a Red (heart healthy!) Hamiltion Beach Toastation. My daughter eats Trader Joe's gluten-free bread and it leaves little BLACK, burnt crumbs. It needs to be "swept" out daily with a little brush or it builds an awful crust fast. I keep the pan that came with it on the oven grill all the times. There is a lot of... -

Best pizza I EVER had I made myself with Polenta! Now that is fun, season the heck out of it, leave it "runny", pour it out on parchment paper(I just bought some reusable sheets!) cook in a HOT oven for a few then top it and bake again, keeping the rack on the bottom. It will get crispy,(EVOO) if that's the way you want it. I also make lasagna noodles...

ARCHIVED Very Yummy Gluten Free Brownies
fantasticalice replied to lichjen's topic in Gluten-Free Recipes & Cooking Tips
I can buy single servings for a buck at my store, Pam's is as good as it gets. I always add stuff, toasted sunflower seeds are awesome! Dried cherries make it wow. AND, use less liquid and you can make cookies, just a couple or four. Have you ever tried the brownie mix in a waffle maker? Smile Alice -
So very grateful for this thread! My 29 yr old daughter has suffered for years and this IS the year we get help! Only problem? It won't be from a doc. She also has suffered at the hands of STUPID doctors who act like God and know nothing about Celiac or HS. Because we have been on top of it has not gotten to this extreme. Today I will buy Dial, clean...

ARCHIVED Planning A Bakery
fantasticalice replied to madwriter78's topic in Gluten-Free Recipes & Cooking Tips
Being the health nut that I am I'd 1st like to tell you that most gluten-free bread stuff has no nutritional value and I, for one, have stopped eating it. I too was going to do a gluten-free deli but not get into all the allergens. Too much libel if you ask me. Arepas is what I had in mind as well as pandabono, which is manoic flour/starch. You can... -

ARCHIVED Newbie To Gluten-Free Diet & Wanting Breadmachine Advice
fantasticalice replied to hunsakermountain's topic in Gluten-Free Recipes & Cooking Tips
I didn't like mine & sent it back. You still have to mess with it. gluten-free bread is really easy to make but I'm not so gung-ho since I found most bread has no nutrition! Oh, I added all kinds of protein seeds but then I got wise when I started getting fatter. To each his own but I lettuce wrap these days and my friends are so jealous! Too... -

ARCHIVED Baking With No Starches?

On the back of Bob's Red Mill Organic Quinoa there is a cupcake recipe using only quinoa flour. Also a carrot cookie recipe on the back of the Amaranth flour using some arrowroot and only amaranth. I have used teff, quinoa, & amaranth interchangeably. I am starting to give lessons in bread baking because I am finding most people are making this too hard...
