ARCHIVED I Need A Good Baking Book
fantasticalice replied to thegirlsmom's topic in Gluten-Free Recipes & Cooking Tips
Flying Apron by Jennifer Katzinger; gluten-free & Vegan, excellent! Blackbird Bakery by Karen Morgan Gluten-free Girl by Shauuna James Ahern These three books, along with Mary's Gone Crackers, have changed the way I eat and feel. I stay far away from all that white stuff and grind what I can myself. Flax meal makes a great "base" for crackers... -
ARCHIVED Bread Machine Opinions?
fantasticalice replied to deannab's topic in Gluten-Free Recipes & Cooking Tips
I have 3 breadmakers sitting around. You pay shipping and you can have one. Last year I bought a new one with a gluten free setting, took it back. No matter which one you buy you have to mess with the damn thing. You can't just walk away. If you don't time it right and take the paddle out you have a huge hole in your bread. Not for me. Myself? I would... -

ARCHIVED Using The Pots Pans And Bakeware I Have Now
fantasticalice replied to bauerpratt's topic in Gluten-Free Recipes & Cooking Tips
It was my understanding that as long as you washed everything with soap and water there would be no problem. All I did was wash all my iron (I have at least 15 pieces) with soap and a brush. I learned at America's Test Kitchen to season with flax oil. It creates a seal that is so good, so perment. Problem is, you have to do it more than once but not more... -

fantasticalice replied to fantasticalice's topic in Gluten-Free Recipes & Cooking Tips
GINSOU, That was an excellent reminder, thank you. Actually, I am cooking for my dogs but I do taste everything. The dogs are my 1st tasters of anything. I'm super low salt & sugar so it works out fine. -
ARCHIVED Kitchen Gadgets

America's Test Kitchen just did a piece on pizza stone verses cast iron. They really liked the cast iron better and it was only $20. Took 15 minutes to reach 500 which is what gets you that roasted effect. Then you put the pizza on the pan. Thin crust takes 5-8 minutes. I have a wooden board that I assemble on to just slip in onto the pan. Lots of cornmeal... -

ARCHIVED New Gluten Free Flour
fantasticalice replied to mbrookes's topic in Gluten-Free Recipes & Cooking Tips
That's exactly what I thought about King Arthur! Guess what? It turned out to be crap! $10 crap. Money better spent on a really good cookbook with multigrains. Karen Morgan has a great new book with the best cakes and cookies, wow! Some white rice but not much. Flying Apron's Gluten-Free & Vegan Baking Book is also excellent. Very little white... -
ARCHIVED Anyone Grind Their Own?

This is an old post but I would grind it denser and then put it in the food processor or blender. -
ARCHIVED Safety Of Xanthan Gum?
fantasticalice replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
This is from Blackbird Backery by Karen Morgan, one of the newer gluten-free cookbooks: Guar Gum is made from the guar bean. Water-soluble fiber, recommended for overall intestinal health. It has very little odor, I perfer it to the more pungent-smelling xanthum which is fermented corn. -
It's expired, a year old to date. Can I still use it?

ARCHIVED What Do You Eat During The Day?
fantasticalice replied to glutenfreemamax2's topic in Gluten-Free Recipes & Cooking Tips
I ate mini beef tacos for breakfast w/ salsa, lettuce, tomatoe. I'd love to eat 4 but i had two. For lunch I had a small salad, beef stew w/ carrots, celery, and a slew of greens. I cook the beef seperate from the veggies and then mix it all together. Allows me to do many things with the beef. For dinner I will work on the huge package of chix breast... -

ARCHIVED What Is A Healthy Oil To Add To Cake Recipes?

ARCHIVED Avoiding Too Many Processed gluten-free Foods

What did you put on the pasta? Did you look at the ingredients on the pasta box? How many? Can you pronounce each and every name on the pasta box? In my book there are no additives in pasta. It's usually a flour and water. I don't really consider it a "processed" food. I would question what it was you put on it. Smile. The Rastas have it right with their... -

Dear Alice, I'd love to learn how you grow your own fingerlings and make your own flour from potatos. Will you share? I buy alternate flours, but always worry that they're cc'd. I saw sweet potato flour in the oriental store, but how do I know that it isn't made on shared lines? This is an interesting article that made me wonder about cc from products... -

fantasticalice replied to pricklypear1971's topic in Gluten-Free Recipes & Cooking Tips
You can make flour from those potatoes! I grow them in barrels, all sorts of fingerlings. Really fun and oh so easy. I want to make sure that everyone knows that I am sharing information and NOT giving anyone advice, medical, diet or otherwise. I only know what works for me and by doing my reading I found the elimation "diet" plan. Not really a diet,... -

Did you not find it ironic that you posted this and the news is, vits might not be as good as we thought. When I saw that gal open her pantry and the bottles of pills, well.....it made me think of me. I started myself on a vit. regiment and haven't been able to poop right for weeks. Stopped taking all those pills and bingo! I feel much better, more like my... -

ARCHIVED Pure Pantry Chocolate Cake Mix
fantasticalice replied to alicewa's topic in Gluten-Free Recipes & Cooking Tips
Pure Pantry is about as "pure" as it gets but Blackbird Bakery is no health book! I made banana bread last night(her only recipe using Bob's Red Mill Blend)just because it was oh so easy and I wanted to see how good this gal was/is in her baking. I have baked so many gluten-free failures it ain't funny. While I considered the bread another failure is sure... -

Cook in iron pans, ALL the time. If the iron pills makes you sick TRY SOMETHING else! Just because some doctor told you something does NOT make it so. Just because a blood test said something does not make it so. I know, I'm a radical. I worked in the medical profession till I could stand it no longer. If I were you I'd be eating lentil soup, black bean soup...
