  11. That just hit one of my BIG pet peeves! None of us ARE celiac! We have celiac disease, but ARE NOT celiac. Celiac is a part of us, but it does not define us!

  13. I just feel that it needs to be proven that it is, in fact, gluten that is making me sick. And, no, I've given up on getting a clear diagnosis from the doctors, but considering the fact that I am trying to conceive right now, I quite frankly am going to need doctors. So I need to do this and document it prior to getting pregnant.
  14. I have been keeping a symptom/food journal since I started my elimination diet last month. I will keep a detailed log of exactly what gluten items I eat and what symptoms/when.
  15. I take a chewable cal/mag supplement made by Country Live called Cal-Snack. There is a chocolate and a vanilla/orange flavor. They are certified gluten free/GMP certified.
  16. Magnesium is necessary for all muscle function, in conjunction with calcium at proper ratios. If magnesium is not supplemented at the proper ratios with the calcium, the calcium is pretty much just wasted.

  20. Thanks! My sleep has really been up and down since I went gluten-free. I've always before been a very sound sleeper, but now I have some nights that are good and many that aren't so good.   22. Is it possible you are still getting trace amounts of gluten, like from CC? Or maybe you are eating too many processed foods? University of Chicago has a Celiac center, so you might want to contact them regarding the nutritionist or dietitian.

I'm not sure which direction I'm going with it yet, but as of now, my plan is to take it not as a 'complainer' standpoint, but as an "I'm an employeee with Celiac and I can see many opportunities (a big buzz word in restaurant management) that we have in which we can better serve other guests like me." I want to approach it not with a 'look at all these problems...

I'm personally working on trying to spearhead a one-woman campaign to take to Darden corporate (Red Lobster, Olive Garden, Longhorn Steakhouse, etc., I work for Olive Garden) to try to get more Celiac or even allergy awareness education incorporated into training for all positions, so I wouldn't have time to spearhead anything...
