I was at Winco foods yesterday, checking their frozen food section and they actually had some Vans gluten-free frozen waffles there, but only 1 flavor available. They have other flavors available at a local health-food store too. So you should be able to find something, and I've heard they're good. I just wish maple syrup (the real thing) weren't so darn... -

Another dietary area that might be causing issues is 'excitotoxins'. When you said you mostly eat fresh foods you prepare yourself, I thought that might not be the case. Then you mentioned a sweet tooth, so I decided to at least mention it. Do you eat or drink any artificial sweeteners, such as aspartame / equal? I know I used to drink diet coke years ago... -

You can't eliminate iodine completely, except for a short duration, since it's a necessary nutrient. But you could try it for a few days and see if it helps (there's a list of high-iodine foods as well as recipes from www.thyca.org )? And if that helps, you can certainly reduce it in the future. Personally, I would say yes, absolutely. I had at least a couple outbreaks of DH and other symptoms like anxiety, fatigue, and very painful right knee that I didn't associate with wheat / gluten at all. That was years before I did start having heart burn for a while before I stopped eating wheat. I didn't associate that either, but it was nice that it went... -

My input is only to say 'good for you!' If no one else was saying anything, or even if they were, your opinion is every bit as valid as theirs. I know how you feel, but really it's ok to speak up. If you can, find out who is supplying the ham and check how it's being prepared. I know when I've seen the glaze ingredients on some hams they've been wheat-free... -

It's also possible that there are things added to the sour cream, such as carageenan or similar items that is more of a problem for you, than the sour cream itself. I've only found one brand locally (daisy) that is just cream, all the others have additives. I think the organic varieties might be o.k. too, but in the U.S. they're allowed to do things to food... -

I'll play, since it was the blood-type diet that had me eating spelt and rye and very occasionally wheat for several years when I should have been gluten-free. O+ American (Scottish and Canadian French and who knows what else).

I'm not sure what you mean by 'burp up', but that may fall under TMI, also. However, I've read a few blog entries for the book 'Wheat Belly', and apparently eating wheat will cause a large increase in one's blood sugar. Higher than a candy bar, even. Also, as far as I recall, boys continue to grow until they're about 18 or 19 or so. I stopped growing when I was about 14 I think (at 5'2") and my twin brother grew a bit even after high school I think? That was a little over 30 years ago... At any rate, he's a foot taller than I am. -
For Thanksgiving gravy my sister-in-law used potato starch. It was pretty good!

I had a shampoo with wheat in it I just ditched, and another with panthenol that may be derived from wheat that is questionable. But I searched the forums, and apparently garnier, dove and suave are good at labeling any gluten ingredients. So I went out and got some suave shampoo and conditioner, and though I've only used it twice so far my scalp itch is...

You've gotten some great replies so far, I just wanted to throw this in. Stunted growth, low bone-density as well as other issues would tie in with celiac due to malabsorbtion of nutrients. In other words, because of the damage the gluten does to the digestive tract (intestines, etc.) one doesn't absorb some or most of the nutrients from the food. Technically... -
Hooray! I recently joined a local linux user group that meets at Shari's. I hadn't yet looked or inquired about any gluten-free options, so I'm glad to hear about that. The group is having their Dec. meeting at a pizza place, so I'll be skipping that one.

Yes. And now I'll share some of that story with y'all. In fact I've had it in my ears for 2 years now. At first it was just my left ear, and I thought it might be some sort of bug or whatever so I started eating more yogurt for the probiotics. Bad move, that just made it start getting 'weepy' and blocked up my ear so bad I couldn't really hear out of it....

A better 'self-test' for DH, as far as diet might be to eat something high in iodine, such as dairy products or some sort of food that has added salt. Perhaps a salty bag of chips? Or some seafood like tuna or salmon. Those are the ones that bother me the most. Also, is it itchy? Thinking back, I recall my first DH outbreak was on my upper chest area and... -
If she could absorb the progesterone through the skin, why not any possible gluten ingredients? Especially if she has DH, then I'd suspect that might be the issue. I know 'they' say that the gluten molecule or whatever it is, is too large to pass through the skin to cause problems, but we know 'they' aren't always right. It may be there are exceptions that...

My suggestion, though perhaps someone with more gluten-free baking experience will have a better one... would be to use 1 cup rice flour and 1/2 cup each of tapioca and corn starch. Edit, adding: if you don't mind it a bit 'dense' then you could increase the rice flour a bit and reduce the starches. -
