  1. My guess is that it probably is gluten, because you ate out. My gluten reactions vary...from almost right away, to hours later, and have different symptoms sometimes. Mine ususally hit really hard really fast.... but, I went out to eat (and I NEVER eat out because I am so sensitive) this week at a "safe" place....hours later I felt it and am still dealing...
  2. Ada, Welcome to the board! This can be very overwhelming. Celiac is a strange disease. Luckily, there are a lot of products out there. Some areas carry more. Where do you live? Do you live near a Whole Foods? Have you looked online at www.glutenfreepantry.com, glutenfreemall.com, or allergygrocer.com? Tinkyada rice based pasta is a great gluten...
  3. here was a recent thread about it: Open Original Shared Link
  4. Epilepsy and celiac Open Original Shared Link Epilepsy and Celiac Disease: Favorable Outcome With a Gluten-Free Diet in a Patient Refractory to Antiepileptic Drugs. Neurologist. 2006 Nov;12(6):318-321 Canales P, Mery VP, Larrondo FJ, Bravo FL, Godoy J. From the *Department of Neurology, Hospital Regional de Talca, Talca, Chile; and the daggerDepartment...
  5. Here is what I posted on another thread: Here's what I know, and it seems like there are two issues at hand (this is all simplified, maybe someone else can add more!) 1. Most commercially grown oats (including Quaker) are grow in fields that are rotated with wheat/gluten. So they believe in the processing, wheat can get mixed in, which would explain...
  6. Hi pinktulip- I'm not the master baker, but I think honey has added a lot of flavor and texture to gluten free mixes, but, doesn't taste 'honey'ish. (I don't like the taste of honey!) If the mix says to use honey...I would probably use it. Gluten free mixes can be tricky, and they usually spend a lot of time trying to get it "just right" with specific...
  7. Wow, this being the last week IS a great reason to celebrate! woo hoo! and yes, we can only hope that we keep those 'buggers' away . I am so impatient for your results, too. My fingers are crossed....we'll make this work. Its funny...not knowing is crippling, but on the other hand, sometimes the first part of knowing is crippling to me (thinking back to...
  8. wow, i think i am in pain just thinking about what you all have felt!!! patti and electra---hope you are both doing ok. xoxo
  9. Regular oats, even if they do not list wheat, are not safe for celiacs because of processing and how it is grown. This includes Quaker Oats. Organic only means but so much to a celiac...organic gluten is till organic gluten, no matter how you package it There are a few brands that are supposed to be safe---including McCann's irish oats. So it...
  10. Stephanie, your post just gave me goosebumps!!!! You must be so excited and so proud. :) I love that we can all appreciate and celebrate our victories with each other! Laura
  11. What about rice flour? I don't think any of them are a 1-to-1 switch....many can often be used interchangably, until you get the mixture that you like. There are also many bean flours as well. https://www.celiac.com/st_prod.html?p_prodi...-17106158117.ee check out that link...maybe some ideas for you?
