ARCHIVED Are 4C Gluten Free Bread Crumbs Really gluten-free?
sunny2012 replied to gfmomtoK's topic in Gluten-Free Foods, Products, Shopping & Medications
In the US, these are the stipulations that manufactures must follow: " What does gluten cross-contact mean in the context of the final rule? The term “cross-contact” is not defined in the final rule, but gluten cross-contact generally refers to the unavoidable presence of gluten in a food due to contact with a gluten-containing food (wheat, rye, ba... -
ARCHIVED Tested Positive Aged 2 But Do I Really Have Coeliac Disease?
sunny2012 replied to Flydigital's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Diagnosis by positive biopsy is 100% accurate. If you had damaged villi at age two, you have Celiac. Period! The only instance that I know about where it is inaccurate is as a side effect of blood pressure medication which I doubt that you were taking at age 2. I would not trust a doctor who wants to waste tons of money running blood tests, put a patient... -
ARCHIVED Are 4C Gluten Free Bread Crumbs Really gluten-free?

I never eat anything that is "made in a facility that also produces foods containing wheat"! EVER! I would guess that is your daughters problem. Report the lack of notice to the government oversight agency. Rules are meant to be followed. It will take time but they will do something about this violation. We have to stand up for our rights to have dangerous... -
Hubby reminded me of the appointment that we were both required to attend before they would release me from hospital (granted it was several decades ago). During it, the nutritionist actually suggested that if I needed to "drop a few pounds", I could eat gluten for a week. Many of her clients used that "trick" to lose weight. And I should consider myself...

ARCHIVED Pizza Hut Gluten Free
sunny2012 replied to masterjen's topic in Gluten-Free Foods, Products, Shopping & Medications
I have personally observed the kitchen when they get busy. Local restaurants can be so different about how careful they are that I would never trust my life to hoping they follow thru with all the rules to keep me safe. It really depends on the management's dedication to and understanding of the life threatening issues with Celiac. Training and actual... -
ARCHIVED Low Gluten Flour + Gluten Does Not Create Celiac Reaction?

Oh, And I totally agree with all the other posters about the confusing belief that any gluten can be rendered safe. -
ARCHIVED Low Gluten Flour + Gluten Does Not Create Celiac Reaction?
sunny2012 replied to pone's topic in Food Intolerance & Leaky Gut
No Celiac should count on symptoms to judge the effects of gluten. Failing to absorb say iron, vit B and calcium can go on for quite some time before symptoms occur. By that time, it can take just as long or longer to recover from consuming gluten. There is no prescribed medications for Celiac. Most doctors know how to write scripts. So we have to fend... -
ARCHIVED Mystery Symptoms? Possible Celiac?
sunny2012 replied to jamie101's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had heart palpitations. In my case, it came from low iron numbers. Low hemoglobin (low enough to need blood transfusions) is a side effect of not absorbing nutrition properly. Get the Celiac blood tests.- 9 replies

I have never found a nutritionist of much value. We Celiac's tend to know more about our diets than they do. I'd see a doctor and get tested for the values noted above. Vit D and Iron are two that take a long time to recover. They can give you iron by IV if your numbers are not coming up. Good luck

I agree with the previous poster. IT is just to unsafe to trust to so many people handling my food. And even in places where they have a strict gluten-free policy about some dishes with separate differently stylized plates to be used just for gluten-free meals, I have been served my food on a regular plate and "assured" by my wait staff that THEY are certain...

Then there is this from the official Pizza Hut site: "While Pizza Hut® is proud to offer pizzas with gluten-free ingredients, Pizza Hut kitchens are not gluten-free environments. Due to the handcrafted nature of our menu items, variations in vendor-supplied ingredients, and the use of shared cooking and preparation areas, we cannot assure you that our restaurant ...

I would never trust a restaurant were every item is gluten filled. Plus, my health would depend on minor children actually following tedious procedures like changing gloves and never ever putting anything down on the gluten-free space when the place was crazy busy. I just get way to sick from even walking into a Dunkin Donuts.

ARCHIVED Low Vitamin B12/d...6+ Years Post-Diag?
sunny2012 replied to canadave's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have been gluten-free for nearly 20 years. I am still vit D deficient. I wonder if that part of the intestines is less able to heal for some reason. -
ARCHIVED Cosmetics! Help!
sunny2012 replied to MidnightSaturn's topic in Gluten-Free Foods, Products, Shopping & Medications
This is one of my biggest frustrations too. People seem to think that "some" gluten all over our faces can't possibly find its way into the mouth and thus the stomach. I totally stopped using mascara! We still have to wash it off. That gets it all over the hands, a wash cloth or cleaning pad and then it really can make its way into the mouth pretty easily... -
ARCHIVED 8 Year Old - Behavior Issues And Anxiety
sunny2012 replied to missdiamondbc's topic in Coping with Celiac Disease
Personally, I'd hold off on any psych evals until her stomach heals - if she has Celiac. My most notable symptoms are all first neurological then stomach later. One of mine is OCD. I have to tell them you can't have OCD about this right now. They have to learn to manage like any other challenge. When she feels better, that may start to subside -
ARCHIVED Symptoms Getting Worse. Ideas?
sunny2012 replied to Jonesy3449's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Is your house gluten free? My family had to stop having any gluten in the house while I healed. As we start getting less gluten, it can actually make us much sicker than when we were being constantly bombarded with it. Other than that - we can still have all the other normal issues. My gallbladder was necrotic - actually put me in hospital several... -
Is your kitchen gluten free? When I was first diagnosed nearly 20 years ago, my family wanted to remain gluten-filled. I kept getting sick over and over. And as I healed, I got even sicker from the smallest amounts of gluten. We have a gluten free kitchen now. I can only speak for myself but the less gluten that I have in my diet, the worse my symptoms seem...

ARCHIVED Pizza Hut Offering Certified gluten-free Pizza!
sunny2012 replied to kareng's topic in Publications & Publicity
Not sure how this part was cut off. All the above people were part of much more stringent rules for customer service. In one case, the restaurant is now closed. The owner/operator called me to beg me to overturn my report of his employees ignorant behaviors. They stop the gluten-free safety protocol in the kitchen. There is no recognition of the servers... -

ARCHIVED "mild" Celiac?
sunny2012 replied to kaytuh's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Outward, noticeable symptoms are no real indicator of the "seriousness" of Celiac. Damage is done to the intestines regardless of noticeable effects. That means something is not being absorbed from the foods that are eaten. Some deficiencies the body can manage to handle until age becomes a problem. Others may simply go unnoticed. Eventually, this damage... -

I would not put my health in the hands of a Pizza Hut employee with limited training about CC and the seriousness of Celiac disease. -
ARCHIVED Reactions From Breathing In Gluten?
sunny2012 replied to LEO27's topic in Gluten-Free Restaurants
I was diagnosed long before the blood test was developed. I react this way too! Frankly, I don't really believe any CEliac should trust a reaction to decide that they were glutened. There are Celiac's who have little to no symptoms. And depending on where the damage occurs, it can take many months to years for symptoms to show up outside the intestines. -
ARCHIVED Do You Ever Break Down And Eat Gluten Every Once In A While?
sunny2012 replied to supersquatchy's topic in Coping with Celiac Disease
No, never, not for any reason. Why would I want to poison myself? I have neurological symptoms first. It is a nightmare to have to suffer until I recover. Plus, if I do it to myself, others assume "a little bit can't hurt me". That just makes my life even more of a trial.
