  1. Coconut, rice and almond milks. But, I prefer coconut milk when baking.
  2. I've been concentrating on recipes using coconut flour and almond flour... My hubby is type 1 diabetic... You should check them out. (Keep in mind that some recipes aren't going to be very good...don't get discouraged! Through trial and error I've come up with some really good ones)

  6. I was quite impressed with Three Bakers.... The only problem that I have is that I can't get individual slices from the frozen loaf (have to thaw the whole thing). We just don't eat enough bread to make it worthwhile...so most of it went in the trash... That's the biggest reason why I've been thinking of baking my own bread...so I can freeze it in...

  9. Well said... My 17 yr old son is that kid that other mothers love... They could be cutting out a kidney and he'd just smile and ask if they need the other. But...for mom? Sigh... I tell him, almost daily, that there's a reason God makes mothers love their kids... I so love 17...
  10. The thing that sticks out, to me, with your example is that "you would know of your neighbor's peanut allergy"...how can companies "know" about the individual needs of their consumers?

  17. Please take the time to read this... So many posts here from folks who have "gone gluten-free" but continue to have some significant symptoms. Fatigue, constipation, etc. I see B12 deficiency, thyroid, etc as suggestions...but I haven't come across magnesium deficiency, yet. So, I really wanted to bring it up... Magnesium is a CRITICAL element....

  23. Awesome... (duly noted on the "cut first"...thanks guys!) I'm going to try the baking method tonight... (I don't do much frying so the confidence level is pretty low). Any idea on temp/time for baking? I'm taking a pack of tortillas out of the freezer right now...
  24. MitziG... Have you checked out www.gutsy.com? Caroline (the owner of the gutsy site is a super-sensitive 18 yr old. She follows GAPS diet. She is an extraordinary young lady and very very knowledgeable. She is, also, very active on her site...answers every commenter from what I've seen so far. I'm just thinking you might want to check her...
