  1. Just FYI - my celiac husband always loved grits, and for a long time he got along fine with Quaker's brand; then they started bothering him. After 2 or 3 reactions, he was sure it was the grits, so he called the company. The response he received was that the same machinery was used for gluten products as for the grits. The individual he spoke to said probably...
  2. So sorry to hear about your stuck crust. I know how discouraging it is when you try so hard to make something gluten free and things just don't turn out right. I've been at this for 17 years, and I still have occasional flops...but not near as many as in the beginning. I use Kinnikinnick Pizza Crust mix and it is sooooo good that I buy it direct from...
  3. I used to buy corn flakes and grind them up.......then I came across this product in my regular grocery store and I couldn't believe it. It says Gluten Free right smack on the front. Its called Southern Homestyle Corn Flake Crumbs; and it comes in a can shaped like Pringles Potato Chips. It was only 2.49 for a 12 oz can, which is really cheap for a gluten...
  4. My husband had symptoms off and on for about 15 years before he was diagnosed, but they were sporadic and would come and go. Then about 5 years before he was diagnosed, they started coming more frequently. Every 4-6 weeks, then 3 weeks. He was alone with my mother at our home when she died (unexpectedly). They were very fond of each other and exceptionally...
  5. I read a post the other day that said Health Valley had come out with a new Cream of Chicken, Cream of Mushroom and Cream of Celery that is gluten free. I immediately went to my health food store but they didn't have it on the shelf yet. Said they would try to order it. I can hardly wait because it would be so handy...especially with the holidays coming...
  6. Hey Julie - I know all about biscuit flops. I have tried every recipe I could get my hands on for 15 years and mine still turned out like hockey pucks. The GOOD NEWS is I stumbled across a mix that is absolutely awesome. Its called 1-2-3 Gluten Free and they have a website under the same name. These biscuits are to die for.. and so easy its unbelievable...
  7. <_<I had to reply to your post because I know exactly what you mean. My husband is the celiac in our family and he was diagnosed about 15 years ago, after having symptoms get progressively worse over about a 12 year period. In the beginning, the first thing that bothered him was beer and pizza (a double whammy) But then a month later he would...
  8. My granddaughter is celiac and a vegetarian and I know what you mean. Most vegeterian foods contain gluten. One product that she has used and really likes is called Quorn turkey roast. Most healthfood stores carry it. She bakes it and then slices thinly with BBQ sauce. But I'm sure there would be a variety of ways you could fix it Also, there is...
  9. Thanks for the info Mimi...I am curious..Does your bakery ever make gluten free bread; and if so, what flour combo do they use? Thanks Kay
  10. Namaste really is flat, but its amazing when you add 2 or 3 teaspoons of yeast to it how it improves, This mix is yeast free and thats why it doesn't have that really nice fluffy and chewy texture that you are looking for. Another favorite of mine is Kinnikinnick Piza Crust Mix....and it doesn't have the seasoning in it so you can add as much as you...
  11. This only works for drop cookies but it is really fast and versatile for everyday. 1 package gluten-free white cake mix cut in 6 Tablespoons margarine Add 2 Eggs Then just add chocolate chips, nuts or whatever type of cookie you are making. Here is one of our favorites. Add 3/4 Cup Toffee Bits (at Walmart) 3/4 Cup chopped Pecans I add another...
  12. Unfortunately, the only one I know of with a gluten-free setting is the Welbilt ABM-150R and they don't make it anymore. It has a program on the front face called "multilogic program", but it has to be that model. (Welbilt also private labeled some for Sears called "The Kenmore Choice" and its the same thing if it has the 'multilogic program' on the front...
  13. :)So great to hear about Biaggi's...we'll have to try it as we live in Des Moines. Of course, the is PF Chang's and Outback, but they are always so busy and very expensive. My husband is the celiac and he is about as sensitve as they come. He also cannot tollerate MSG and TBHQ. He eats at Wendy's for their Chili and Baked Potato and McDonald's for french...
  14. Yes - Kinnikinnick has a flat shipping fee of $10 up to orders of $200. Thats probably the best deal I've seen. Check their site, but I think they have some dairly and soy free items
  15. Thanks for the info..I think it would be absolutely great if all celiacs could help these folks in their effort; to say nothing of the fact that their products are absolutely FABULOUS. I have been baking gluten-free for many years and I had never successfully made a baking powder biscuit. Mine always turned out like hockey pucks. This really bothered...
  16. I think we can all relate to the storage problems for various flours, mixes, etc. I finally had my husband take one of our closets and build floor to ceiling shelves in it for a pantry. As to Pizza. We just love Kinnikinnick Pizza Mix (not the ready made crust-but the mix). Just follow the directions on the bag and that recipe makes 4 pie size pizzas...
  17. I am not the leader, but very active in our local support group. We meet at a church and have use of the kitchen facilities. Our meeting is always a potluck, but new members are excused. We end up with the most beautiful spreads of gluten free food you can possibly imagine. The rule is that you have to bring the recipe (or brand or package) for the...
  18. I found your post very interesting....at least we're getting some cross contamination attention too. My husband has always loved grits and used to eat them in restaurants with no problems. We started fixing Quaker at home and he got along fine. Then one time they seemed to bother him, tried again and still bothered him. This prompted a call to...
  19. I have been cooking gluten free for many years and we think the very very best pizza crust is Kinnikinnick Pizza Mix. You are right, its sticky. The secret is, after its mixed, use a ice cream scoop with a lever to deposit dough onto greased pie pans. I just use the foil pie pans. Then spray the oil liberally directly on your hands. This is an absolute...
  20. I have only ever purchased gluten-free tortillas once and while I can't remember the brand, I think its because they were'nt worth remembering. I have, after many many trial and errors, found a recipe we are all very satisfied with. I use the Kinnikinnick Pizza Crust Mix, but for Tortillas, I eliminate the yeast. There is one thing that is very important...
  21. My husband, who is celiac, used to love grits. When he became ill a few times after eating them, he called Quaker. The individual responding stated they couldn't guarantee them to be gluten free due to possible cross contamination in the equipment. Just thought I'd pass this along.
  22. Hi Folks Just wanted to throw this in the mix. My husband has been diagnosed celiac via biopsy for 18 years and he is extremely sensitive...so he know his body well. On occasion, he has had celiac like symptoms when we were absolutely sure he hadn't ingested any gluten. Muscle aches in his calves, headaches, foggy brain, burning eyes, diahrea...
  23. Hi -I have been baking gluten free for my husband for 18 years and can make almost anything, but just this past weekend I came across the very best hotdog bun recipe I've ever made. What a coincidence. It is the recipe that japsnoet posted that is in the Gluten Free Gourmet Bakes Bread page 176. But just in case you don't have the book I'm going to repeat...
